About this Cook
Hi! My name is Kelsey, and I am a young mom and cook! I am a student trying to finish school with a degree. I also love anything fun, new, and that brings out my creative imagination, which is good because my athletic side is disastrious! I love meeting new people and finding new yummy recipes to make for my family and my daughter!
My favorite things to cook
I love to find a good appetizer. I love entrees, sides, salads, casseroles, mexican food, italian, seafood...give me anything new and I am willing!
My favorite family cooking traditions
Making cookies and Christmas time is a must! So any new cookie recipes I love to keep an eye out for. My mom always also makes tamales for the holidays...thats my favorite!
My cooking triumphs
I really havent been cooking long enough to say!
My cooking tragedies
Cake Pops! I have made them...oh, about two or three times I think...and every single time its a disaster! So, if anybody has any advice for me, I would love to hear it!

Bodacious Broccoli Salad
My 3 year old absolutely LOVES her veggies, and broccoli is no exception. Tonight I was looking for a simple and quick recipe for dinner to use up our broccoli, and this was perfect! She devoured it as did I, she wanted thirds! She dosen't like cheese, so I omitted that but when I served myself I just shredded some on top of mine, and it was mild, cause thats all we happened to have. It was still so yummy! I also didn't think it was too peppery, but that is because I a, a big pepper fan, so I would recommend adjusting it to your taste. I also cut the broccoli in rather small pieces and I liked that better than in big chunks with the stem. Another thing I would have done is added craisins and sunflower seeds or walnuts if I had them, but I didn't have any on hand. Otherwise, very good, simple, and so quick!!

Stuffed Mushrooms IV
I thought these were very delicious! I did alter a couple things, though. I used jimmy deans sage sausage, a just a dash of minced onion and garlic, because the sausage was already flavored. Then instead of the heavy cream, we used cream cheese, (it melted in the pan) because the store was all out of heavy cream! (i guess thats what we get for going on thanksgiving!!) we also added the chili powder into the mix instead of on top, because thats what someone else suggested. very good! :D thanks!

Tex-Mex Turkey Soup
this was good. It kinda tasted like my moms chicken tortilla soup, so the flavor wasnt all that new to me, but still very delicious. worth trying! thanks!!
