Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

I thought this was very good, and easy. I did not have fresh parsley and used dried. I suggest using fresh parsley as the dry gives it a more "spinachy" taste. I used a vidalia onion as I did not have shallots, and actually added some small apple chunks. I sauteed the onions, garlic and apples a bit before mixing with the cheese. I did put it under the broiler for a few minutes after the chicken had cooked. I think next time I will cook the bacon slightly before wrapping the chicken. I also used three slices of bacon on each breast as they were big breasts. All in all, my husband and I really liked this and will make it again!

Slow Cooker Spare Ribs

This was a great recipe and I thought the flavor was wonderful! My problem was that I had to turn on the slow cooker early in the morning (7:00) and by the time I got home (4:00), some of the sauce was burning in the crock pot! If I could have started it later, it would have been fine. Perhaps I will double the sauce recipe the next time so it won't all boil away by the time I get home. The meat was PERFECT and just falling off the bone! I will definitely make this again.

Pork Tenderloin with Dijon Marsala Sauce

This recipe is so good! I did not have any shallots at home, so I finely chopped some red onion instead. I used cooking Marsala wine and it was such a wonderful flavor with the Dijon and onion! My boyfriend absolutely loved it, and I think I'll make it for my mother when we have her over for dinner!

Pizza Casserole

Very easy recipe, and quite good. It really did taste like pizza! We love any kind of pasta and casserole in our family, and this was a great mixture of the two! I would certainly make it again!

Filet Mignon with Rich Balsamic Glaze

This recipe was very easy, and good. Not one of the more exciting recipes for filet. I did cook some sauteed mushrooms to go with this. Made a rice pilaf with nuts and currants to go with it, and green beans. Made a nice dinner.

Peanut Butter Cup Cookies

These are the most delicious cookies I have ever made! They are very simple, and I give them to friends at Christmas. My friends rave about them. I used to make buckeyes every Christmas, but these are MUCH easier and just as popular!

Curried Coconut Chicken

Chicken Papadoris

This was such a delicious recipe. I added some golden raisins and a little extra curry. After putting the cornstarch in, I let it simmer for a good 20 minutes. It thickened up very nicely. I served it in puff pastry shells and sprinkled some fresh shredded coconut on top. My boyfriend and I both truly loved it!

Chicken Pot Pie III

Simple and REALLY good! I actually didn't even cook the chicken before mixing all the ingredients together because the chicken cooks right in the pie! We have this a lot!

Apple Rosemary Pork Tenderloin

This recipe is delicious and a nice change to the usual pork tenderloin marinated in soy sauce mixtures. I did cut the cooking time to 45 minutes each part instead of and hour each. My mother did it for an hour each part, and hers came out dry and tough. Wonderful flavors!
