Fresh Strawberry Upside Down Cake

Reviewed: Apr. 16, 2013
How wonderful! I would suggest, however, putting it in two cake pans instead of a 9x13 unless you have a platter that would handle that big a cake once you turn it upside down.

Aunt Norma's Rhubarb Muffins

Reviewed: Jul. 3, 2011
I have to agree with so many reviews on this site! These muffins are wonderful! The next time I make them I will probably add a bit more rhubarb. I did chop up the rhubarb in fairly fine pieces and used pecans instead of walnuts just because of personal choice.

Vegetable Pizza I

Reviewed: Apr. 16, 2011
Instead of cutting this AFTER you have put the cream cheese mixture and veggies on it, cut it BEFORE you put anything on it. That way, if you serve it in the pan, it isn't messed up when you cut it. If you serve it in something else, it is still much easier to get out of the pan. I use a pizza cutter to cut the crust.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Mar. 20, 2011
How great! I used Sweet Baby Ray's Sweet and Spicy sauce. This recipe is so forgiving you can use whatever sauce you like! Next time I will add onions, though. I was amazed how tender the chicken was even though I put the breasts in the slow cooker frozen. There is a chicken taco soup on this site that also uses frozen breasts, and they come out nice and tender, too. Even though I used chicken breasts in this recipe, I usually use chicken tenderloins which I will probably do the next time I make it.

Chocolate Cherry Cake III

Reviewed: Feb. 27, 2011
Very nice, simple to make, moist cake. I think it is much prettier in a bundt pan; however, if you do put it in a bundt pan, bake for approximately 50 minutes. This cake cuts beautifully even if it is warm! I made this cake for a friend who had left shoulder surgery and her husband who had broken his left shoulder! I figured something chocolate would hit the spot, and I think this one did! I just dripped the icing and only used half of that called for. Also, I used reduced sugar cherry pie filling.

Quick Black Forest Cake

Reviewed: Jan. 17, 2011
Besides being quick, it is easy! I took this to a church potluck (the ultimate evaluator), and it was well received--delicious, moist, yet held together very well. The pie filling I used was "no sugar added" and it still turned out well. I baked it in a bundt pan; I feel it is prettier that way. You could use other icings, but this one is easy and goes well with the cake.

Baked Zucchini Squares

Reviewed: Nov. 19, 2010
I've made these for myself, but had never made them for church potlucks. So, I made it for a church potluck. Wow! Did they ever go over well. My pan was clean! Now, I'm going to try it for Thanksgiving using egg substitute since I will have two heart patients at my house for dinner.

Italian Vegetable Soup

Reviewed: Apr. 18, 2010
This recipe is wonderful--just as it is! It is so flavorful! One man was complaining to me that his wife would not eat. I made this soup and took it to them. She ate TWO bowls and is still telling me how much she loved it. We also make this soup, freeze it in thirds, so we have it for ill church members when we need it. The only change I ever make is reducing the amount of tomato sauce in half since some people have difficulty with so much tomato. The Italian herbs are super. I'm really excited about using fresh herbs in it this summer.

Garden Veggie Pizza Squares

Reviewed: Feb. 28, 2010
Two hints for this wonderful appetizer! 1) Cut the crust before putting the cheese mixture on. This way, it will look pretty until it is time to eat it. 2) Top with a bit of shredded cheddar cheese.

This got the ultimate test, my 15-year-old nephew who adores barbeque! I didn't change a thing!

Delicious Ham and Potato Soup

Reviewed: Aug. 14, 2008
Oh, my, so many people have rated this, but I had to put in my two cents. I did use chicken base instead of granules, and it was wonderful! Most potato soups are better the next day;I don't know how this one can be any better!

Cheesy Zucchini Casserole

Reviewed: Jul. 30, 2008
Oh, my, but what a wonderful recipe! This will replace one that I always took to church potlucks and for groups at my house. I didn't have quite enough zucchini, so I added one yellow crookneck to the zucchini. The chiles are not overpowering for people who like things blander.

Spinach Pecan Bake

Reviewed: Jan. 13, 2008
A friend made this recipe several years ago, and the two of us ate 3/4 of it at one meal! I don't change a thing, except sometimes I don't even put the extra topping on. When cooking it just for myself I cut it down to 2 servings, and the recipe still works well. I have made it for a dinner party and it went over well, even with people who don't care for spinach. One reviewer suggested garlic; that would be a good addition.

Fruit Cobbler

Reviewed: Sep. 4, 2007
Very good; however, I did make a couple of changes. To cut the sugar, I used a little less than one-half cup sugar and a little less than one-half cup Splenda. I probably ended up with about 3/4 cup of sweetener instead of the 1 cup called for. A second change was to reduce the vanilla by about half. This dish goes very well with vanilla ice cream, especially if the cobbler is warm or even hot!

Strawberry Pineapple Bread

What a wonderful quick bread! And it was a hit at my church. Don't change a thing in this recipe--except you might throw in some big hunks of macadamia nuts so people get an extra treat once in a while!

Turkey Noodle Soup

Reviewed: Nov. 29, 2006
This is great! Do add another can of broth, however. The gravy mix adds a wonderful flavor and consistency. I have made this with leftover turkey, and it was great. Then, I made turkey broth with the Thanksgiving turkey carcass and added three teaspoons of chicken base to it. I have used both frozen and dried noodles. It still turns out great! Serve with fresh rye or pumpernickel rolls. I have recommended this soup to many people; everyone likes it.

This recipe is perfect just like it is! If you like Tex-Mex food, you just try this. And it freezes well--if you have any left over.

Easy Ham and Noodles

Reviewed: Jun. 13, 2005
The only reason I gave this a 4 is because I used several hints by other reviewers and it wasn't the same recipe! I added sauted green onion (from the garden) and mushrooms. I also added steamed broccoli (from the garden). One can of low fat/low sodium cream of mushroom soup and cream of chicken soup were used. You could use steamed carrots, asparagus, or sauteed celery, too. This recipe would work with chicken, too. Thanks, Kathy, for providing a good basic recipe.
