Broiled Chicken with Roasted Garlic Sauce

This was very good. I didn't have wine, so I simply sprinkled the chicken with seasoning salt and a bit of olive oil. Happy to have this recipe! Thanks for sharing.

Attitude Chicken

My husband loved this chicken, but I thought the lemon was just a bit overwhelming. You really have to like lemon to appreciate this. Interesting dish, though. Thanks for sharing. :)

Broccoli Rice Casserole

Fabulous recipe. Three adults ate 2/3 of a 9x13 pan (and it was only a side dish!) A couple changes I made: I didn't have celery, so I left it out. I used brown rice (two bags --4 cups-- of the frozen brown rice from Trader Joes, and I cooked it as directed first) and substituted 12 oz. sharp cheddar cheese for the processed american cheese. I reserved the water that the broccoli was cooked in and used it as the water called for in the recipe (lots of nutrients!)Finally, I topped it with Trader Joes Fried Onion Pieces 10 minutes before it came out of the oven. The crunch was necessary and really, really good! You could easily add chicken or turkey and have a one dish meal. Definitely a keeper; thanks SO much for sharing!

Cream Cheese Penguins

A big hit at our Christmas gathering. My mother-in-law even saved some to show her best friend next time she sees her. Definitely time consuming, but worth it if you have the extra time. The only change I made was the kind of cream cheese I used; I made these with "chive & onion" cream cheese to add flavor.

Ropa Vieja

WONDERFUL! This recipe is fantastic. We made it in the crockpot (low temp for 10-12 hours) and the beef was so tender. We've made it several times now, and this last time found me without Lipton Onion Soup Mix in the house; I ended up adding extra minced onion, some onion salt, pepper and a bit of garlic seasoning. It still turned out great, with almost the same flavor as usual. We serve it on tortillas, typically, but have also used it on sliced french bread or a sandwich bun. Great for freezing, as it makes a lot. Thanks for sharing this recipe!

Lemon Mushroom Herb Chicken

Wonderful recipe. I cut the boneless- skinless chicken breasts into large chunks before putting through the flour mixture instead of leaving them whole. They turned out great! Served over angel hair pasta. Thanks so much for sharing this recipe!

Garlic-Lemon Double Stuffed Chicken

Wonderful recipe! A change I made was to use a cream cheese that had onions and chives in it. It added a bit of extra flavor. Also, I used plain, toasted bread crumbs & parmesan cheese the first time I made it. Turned out wonderfully. I made it today with the same plain toasted bread crumbs but used the called-for romano cheese and it turned out just as tasty. This recipe is definitely a keeper!

Chicken Tetrazzini for a Crowd

Wonderful recipe!!!! I made it for a crowd, and adjusted the recipe a little. I bought "98% fat-free" soups by accident, and I was concerned about flavor. So, I used the three soups, but added 8 oz. of sour cream to help compensate. Also, I sauteed the mushrooms in 1/2 tsp. minced garlic and 2 Tbsp. of dried parsley. As mushrooms make their own juice while cooking, I poured all of the liquid into the mix, rather than draining it; that helped preserve the flavor. I chose not to drain the pimiento, and it also added flavor. I used 8 cups instead of 6 cups cooked chicken, and used an extra 1/2 pound of linguini noodles. Finally, I added mozzarella to the cheddar sprinkled on top before baking. The dinner got rave reviews!!!

Husband's Delight

Wonderful recipe. I used low-fat sour cream, and never missed a thing. I also added crushed garlic & butter croutons on the top, and drizzled melted butter on top. Additionally, I took the advice of another reviewer and put all the noodles on the bottom of the casserole, then layered accordingly on top of them. Thanks for posting this recipe!

Pudding Poke Cake

Tangerine Orange Cake
