This rice was amazing! I've always eaten Spanish rice but never really cared for it. I raved over this one, and I am my biggest critic. The kids even liked it. I browned the rice in butter. It still ended up very soft, not hard as others claimed and I truly cooked mine to a med golden brown. I used fresh garlic and because I had homegrown tomatoes and a green pepper, used that on top of the required amount of salsa. I agree that pepper is also needed. I was very skeptical about this tasting like jar salsa mixed with rice, but the chicken broth adds a unique, wonderful flavor and you would never know how simple this recipe actually is. I have found my keeper recipe!
