Cream Cheese Pound Cake I

Reviewed: Apr. 27, 2003
This pound cake is superb! As per other suggestions I added only vanilla, rather than the vanilla and almond extract (I am not a fan of almond flavoring), and it came out perfectly! Others said they thought it was too sweet, but my husband and I thought it was great! Thanks!

Mexican Rice Pilaf

Reviewed: Jan. 28, 2003
This was terrible! It lacked flavor and came out sticky. I made it for a Mexican themed dinner party--everything received rave reviews--except the rice. It was virtually uneaten, and I ended up throwing the leftovers away. I'll be sticking with my usual Spanish rice recipe.

Clone of a Cinnabon

Reviewed: Jan. 6, 2003
Absolutely delicious! To insure that the rolls didn't dry out on the outside, I used part of another cinnamon roll recipe to make a vanilla ice cream, brown sugar, and butter carmelized mixture; I poured that in the bottom of the pan first, then placed the cinnamon rolls on top of the mixture. Ooey, gooey, and the most delicious cinnamon rolls I have ever eaten! Thanks Marsha!

Creamy Italian Dressing I

Reviewed: Jan. 6, 2003
Terrible! It was like biting into a plain onion. I don't know if other people used a different kind of onion or not, or if they reduced the amount called for, but using half of a regular onion made it entirely too strong. I definitely won't be making this again.

Spinach Quiche

Reviewed: Dec. 4, 2002
This is a wonderful dish! My husband was pretty leary of it at first, but he ended up loving it, and eating almost the entire quiche by himself. I made a few minor adjustments--I reduced the butter to 1/4 cup because 1/2 cup seemed like way too much. I also reduced the cheese by about half, and it was plenty. Also, put the cheese on right at the end; if you put it on as directed you will end up with a brown, crusty mess.

Easy Turkey Tetrazzini

Reviewed: Dec. 3, 2002
Well, I give it five stars only after making some revisions. I read the other reviews about it being too dry, and made some changes first--so I can't comment on what the actual recipe tastes like. I sauteed 8 oz. fresh sliced mushrooms and one chopped onion in 4 tablespoons of butter. I seasoned this mixture with garlic salt, salt, and pepper. I added two cans of cream of mushroom soup, and two cups of sour cream to give it a creamier consistency. I also seasoned the turkey with seasoning salt, garlic salt, and pepper. I combined all of the ingredients, and added about one cup of cheddar cheese. I also reduced the temperature because it seemed a little high. I baked it at 350 for 30 minutes and it came out very good.

Slow Cooker Stuffing

Reviewed: Nov. 28, 2002
This really is the best stuffing! I don't add quite the suggested amount of broth--it seems to get too mushy if you do. I add about 2 cups, and it comes out perfect. It's great because you can make it early in the day before you get too busy, and you don't have to take up space in the much used oven. It also comes out moist every time, unlike traditional baked stuffings.

Chicken Scampi II

Reviewed: Aug. 23, 2002
I really don't see how this got five stars. It was OK, but nothing special. It had way too much butter and oil, and made me feel slightly sick after eating it. I like the fact that you don't need to run to the store to make this, but it does need something to cut the oilyness of it. Perhaps less butter/oil, maybe add some green onions and a bit of white wine or chicken broth.

D's Famous Salsa

Reviewed: Aug. 8, 2002
Good as it is, but if you're looking for more of a homemade, less sweet taste try using fresh cut Mexican style canned tomatoes in lieu of the stewed tomatoes. I also added a jalapeno to give it more flavor, and added green onions for less of a "canned" taste. Wonderful! Tastes just like the salsa at our favorite Mexican restaurant.

Margaritas

Reviewed: Aug. 8, 2002
These are the best margaritas! They are so much better than those made with the mixes, and much cheaper too. These are so good my friends and I now have margarita Thursday at my house. Goes great with chips and salsa!

Creamy Au Gratin Potatoes

Reviewed: Aug. 8, 2002
These are great potatoes that definitely beat boxed au gratin potatoes any day. They are very easy to make, especially if you have a food processor that slices the potatoes for you. The only reason I gave this recipe 4 stars is because if you make it as is they tend to be rather bland and dry. I added a local seasoning we have in my area called Raven's seasoning and freshly ground pepper to each potato layer. The Raven's is basically a seasoning salt. I didn't double the cheese sauce and I thought they were too dry, especially the next day. Next time I make these I will either double the sauce, or put in one and a half the amount of sauce. Great basic recipe though.

Baked Ziti I

Reviewed: Aug. 8, 2002
This is one of my family's all time favorites, and a dish I often make when having company for dinner. It is quick and easy, and has always gotten compliments. One reviewer mentioned it not having enough flavor (I think it's great as it is!)--try adding garlic to the beef and onions, and try using half ground beef and half hot Italian sausage. I always use Clasico tomato and basil and it turns out wonderfully! Great recipe!

Cheesy Ham and Hash Brown Casserole

Reviewed: Aug. 6, 2002
This is a wonderful recipe! It is great to make ahead and serve for breakfast on holidays or when you have company. The only changes I made to this was to add more sour cream (if you follow the recipe it comes out too dry), season the hashbrowns, and use turkey sausage instead of plain ham.

Angel's Chunky Chicken Salad

Reviewed: Jul. 21, 2002
I only gave this three stars, because while this is good with some modifications, if you follow the directions exactly it's not really worth eating. The first thing you need to do is add more mayonaise--three tablespoons just isn't enough to make it creamy. I also used sweet pickle relish instead of the dill pickles. The sweet pickle relish mixes better, adding consistency and flavor throughout the salad. I would suggest adding the ingredients to your own tastes, and not following the suggested amounts.

Artichoke Salad I

Reviewed: Jul. 21, 2002
This salad is delicious! I was looking for a new salad recipe to make for an upcoming baby shower I'll be hosting, and this is it! I only added half of the bell pepper (my husband has an aversion to "crunchy" things :-)), and also added the marinade from the artichokes which kept it from getting too sticky. My only problem is that some of the leaves and hearts are too hard, making them inedible. I tried picking them out while chopping, but it is hard to tell which ones are OK, and which ones aren't. Does anyone have any suggestions to keep this from happening?

Iced Mocha Fusion Shake

Reviewed: Jul. 21, 2002
This is a very good imitation of the frappucino from Starbuck's; however, adding one teaspoon of vanilla made it a little too strong, and overpowered the mocha flavor. I would add just half of a teaspoon, or omit it altogether. Also, for the reviewer who asked what kind of mocha mix to use--I used Frappe Freeze from Trader Joe's.

Greek Pasta Salad I

Reviewed: Feb. 18, 2002
This is a fabulous pasta salad! I've made it for many BBQs and I am always asked for the recipe. I do double the vinegrette as it tends to be too dry if I don't. I also add an extra package of feta cheese.
