Slow Cooker Chicken Pot Pie Stew
I made this today and we had a great dinner! I did alter it to reduce the amount of salt; used celery salt but garlic powder and 1tablespoon of low-sodium chicken Better Than Bouillon. I also made my own cream-of-chicken soup and it came out just fine. Served with baking powder biscuits and it was a terrific, comforting meal.

Country Apple Dumplings
A coworker shared this recipe with me several years ago. Since then it has become a family favorite. It's super easy and super delicious! In fact, my hubby has been craving this so I'm off to buy some crescent rolls. You can easily halve the butter and sugar and substitute lower-fat/sugar ingredients without negatively affecting the taste. I melt the butter in the baking pan, place the dumplings on top, sprinkle the cinnamon-sugar mix on top, then pour the soda around the dumplings. Comes out perfect every time and the house smells HEAVENLY! So glad I was introduced to this recipe--it's a keeper for sure!

Pumpkin Chili
Made this tonight and really liked it! I ended up adding more veggies (I had some to use up). I realized as we were eating dinner that I totally forgot the sugar. Oops! It was still very tasty--loved the way the pumpkin pie spice complimented the chili powder (and cumin--I love cumin so I added @1tsp). I didn't have tomato juice so I put crushed tomatoes in the food processor & added water. I didn't end up using all of it-no more room in the pot and I like a thicker consistency. But I am so glad I tried this--I will be making it again!
