I added 1/2 teaspoon onion salt, 1 1/2 teaspoons table salt and 1/2 teaspoon garlic powder to the rub. I then added 3 cloves of German Garlic crushed inside the duck. Also it was roasted on a rack in the roaster pan with the lid on for the first hour and then with out the lid. It came out less greasy on a rack. All around a great recipe to start with just needed a little tweak for my personal taste.

Japanese Sushi Rice

This is not sushi rice... I eat sushi a minimum of once a week and this tastes nothing like what I have had at many sushi places. This needs the rice wine vinegar and use nishiki rice!

Canadian Barn BBQ Sauce

Cajun-Style Beef and Beans

It's pretty good but not really cajun... The cajun seasoning is very salty. So like most people said cutting it is a good idea. Old Bay Blackened seasoning adds a bit more "cajun" style taste to this dish. This is what I changed in it keeping it still pretty quick and easy. 1 TBS Cajun Seasoning 1 TBS Blackened Seasoning 1 TSP Garlic Powder If you have some extra time say 2+hrs I would recommend making a nice roux to cook this in for a more real "cajun" taste.

Colcannon Bake

Great on St. Patty's Day or any other get together! I like more cheese... So I used 3/4 cup Cheddar and also an imported Irish butter. It just taste better than regular super market butters!
