Best Big, Fat, Chewy Chocolate Chip Cookie

Excellent cookies! I am not much of a baker, too many rules to follow, yet I was able to hit these out of the ballpark. My husband, not the biggest cookie eater, snuck 3 when I wasn't looking. I fudged up the recipe a bit, I forgot to melt the butter. I also added a wee bit of baking powder. Not sure of the difference this made. The cookies where still big and delicious!

Buffalo Chicken Dip

I loved this! Changes to taste, more hot sauce and I used shredded chicken breast as I cannot knowningly consume canned chicken, personal preference. Never the less this was delicious with the crackers, celery and even tortilla chips.

Big Al's K.C. Bar-B-Q Sauce

This is delicious and easy. No reason to buy bottle sauce again. I used tomato sauce in lieu of the kethcup (which I sweetened of course).

Amy's Cilantro Cream Sauce

This sauce was great, I did have to jazz it up a bit. I added canned jalapenos (what I had in stock). I added extra cumin (as I love it so), fresh onions (green and white) and a tad bit more sour cream. I decreased the cream cheese. I served this over grilled chicken w/ onions and topped with cheese. I also made tortilla chips to use the sauce as a dip. My husband said this was one of the best meals I have made.

Garlic-Lemon Double Stuffed Chicken

This was good but very rich...almost too rich. I think the cream cheese was a bit much for me (and I am a cheese lover). I ended up squeezing out at least half of the mixture on purpose. The breading on the chicken w/ the lemon and garlic butter was aweswome. I think the chicken stuffed with a feta/garlic mixture would be better. I will use the breading in the future for sure.

Lime Chicken Soft Tacos

Made this without the oregano. Didn't miss it one bit. I also used twice the amount of lime juice and corn tortillas (tried it with flour, wasn't as good). Next time I may add cilantro. Added gaucamole to my tacos...delicious!

Chicken Vegetable Stew

I just made this recipe today and I have to say it was very easy. I've been wanting to make stew for quite sometime, except I do not eat beef. This is a pleasant change from traditional stew. Although I did have to add some spice to make it flavorful, along with some fresh garlic and zucchini. There also wasn't an abundance of sauce, so I added some extra water. All and all it's a pretty comforting meal.
