Feta Pesto

One of the best pestos I have ever made! ...although red and green doesn't mix to make a very pretty color. I didn't have any parmesan cheese so I used a vintage white cheddar cheese in place along with feta and it worked great. Also used garlic powder since I didn't have any fresh and I replaced pine nuts with toasted walnuts because thats what I had on hand. Definitely worth a try!

Apple Dumplings I

Absolutely amazing! Dice the apples up and mix with a little cinnamon and sugar before sealing up (I also mix in a splash of lemon juice with the apples). I used a little bit less butter and half brown sugar half white sugar. I needed almost the full cup of water, just depends on the consistency you want for the sauce. Bake the biscuits before adding the sauce as other reviewers have stated then bake about ten minutes more with the sauce. This dessert is insane, so darn good.

Beer-Batter Onion Rings

This batter worked great! I used a specialty beer from Rogue breweries. Be sure you use a beer that would taste good on its own and like others have stated you need more beer than called for. You also need to add spices for some flavor, I used salt, pepper, garlic powder, cumin, and cayenne pepper. Although they would be pretty bland done as written, I still give this recipe 4 stars because the batter worked so well. They are crispy, light and stuck together well. Definitely try these!

Roasted Asparagus and Yellow Pepper Salad

Absolutely AMAZING, my husband loved it as well. The salad seasoning is not needed at all, even tho I have no idea what it is, I think more flavors could have ruined the dressing. Instead of almonds I chopped and lightly caramelized walnuts, gave the dish a little more flavor and warm. I also used cayenne pepper in place of hot sauce for a more subtle spice and it was PERFECT. Mix in some grilled chicken and its a whole meal. Great new recipe for asparagus!!!!!

Honey Cornbread

I hope I just made a mistake baking these, or maybe my cornmeal was too old, can it lose flavor?? It needed salt, flavor was bland and too dry. Looked beautiful though.
