Sharon's Stomp Gumbo

Don't be put off by the list of ingredients, it doesn't take that long to put together and it is SO worth it. My store was out of red chile peppers so I used jalepeno instead and it turned out great, maybe a 1 1/2 star spicy--perfect for my family. I used Emeril's cajun andoille sausage and that was my favorite part! I'm from Seattle and we don't have a lot of Gumbo up here so I didn't really know what to expect but everybody LOVED it. This is definately going in my recipe box to make again.

Annie's Fruit Salsa and Cinnamon Chips

Love this. I used to make the chips from scratch but there are cinnamon chips on the market now that are much better than homemade--they're not bitter from accidently overdoing the cinnamon and they're crip without being burnt.

Chicken Cordon Bleu II

Love this dish. It's not as complicated as it sounds, it's just chicken roll ups! I do not normally care for wine-based sauces but I think the wine MAKES this. Really, really yummy. Update: I love the sauce but honestly, there's no need to double it, the recipe as written is perfect.

Boudreaux's Zydeco Stomp Gumbo

This is definitely going in my recipe box to make again. 9/29/09 Update: I used 1 cup unsalted butter instead of the olive oil to make the roux and it was even better! And two 48 oz boxes of low sodium chicken broth.

Spaghetti Carbonara II

Flatlander Chili

I am a pretty good cook but have NEVER been able to make a good chili. This is the one, I will quit trying any other. I did switch the juice for one and half big cans of sauce and I did add one 15 ounce can of diced tomatoes but I kept the seasoning exactly the same and it was PERFECT. Will definately make again.

Blue Cheese Fried Potatoes

Absolutely loved this. I used Gorganzola which is a somewhat milder blue cheese, and that works for my family. It's so nice to find a new potato side dish! Thanks!

Double Tomato Bruschetta

Very good. I used slices of fresh mozz on the bread and the tomato mixture on top of that. I was surprised how the sun dried tomatoes dominated the fresh--I may use a little less of the sun dried next time and more of the fresh. Overall very good.

Super-Delicious Zuppa Toscana

Seattle had snow today, in April (!) and I decided we needed soup. Being as we so often have "soup days" here, I make many different kinds. This one will go to the top of the rotation. Absolutely wonderful. Super-delicious, in fact! I thought the sliced potatoes would be too big but they disolved quite a bit--it was kinda like the potato soup my mom used to make but it had meat in it, which is my men's only requirement for soup. We liked it so much I made it again two days later to serve for dinner guests. Wouldn't change a thing, perfect recipe.

Really, really yummy. It is SO much better then the foil-wrapped stuff at the grocery store and it only takes a few minutes more to make. Perfect with Karen Marshall's Italian Sausage Soup.

BBQ Pork for Sandwiches

Really, really good. Again, I always follow the recipe exactly the first time I make it and this time I was glad I had. I was very tempted, like others, to just throw the sauced meat back into the crock pot--I mean, why mess up another pan, right? Well I think it made a big, positive difference to the final product. The time in the oven kindof browns the tips and makes it seem more like meat done on the grill. I'd never used Sweet Baby Ray's before and it was good with the pork. It was a little sweet, obviously--I may use Bullseye next time for a more savory change of pace. I will definately be making this again.

Mom's Best Peanut Brittle

3 stars because it has potential but as written I had problems. I followed the recipe exactly--the peanuts taste scorched and it's not as clear and pretty as I expected. Glad I tried this in advance of the holidays cause this wasn't a winner for me.

Peanut Noodles

Wow! HATED these. WAY too salty. Maybe if I'd taken the advice of other reviewers and only used half the listed amount of soy--but I always try the recipe as written before making changes. In fact, if I made this again (which I won't) I'd use maybe 5 Tablespoons of soy and instead of cider vinegar, use balsamic vinegar. But that advice would be for the next reader of these reviews cause I'm continuing my search for good cold noodles.

Beef Barley Vegetable Soup

The was better then I expected--especially since the directions are so poorly written. I added two cans of beef broth to the roast and cooked it on low while I was at work. When I came home I removed the roast from the slow cooker to cool and poured the broth into a large measuring cup to skim the grease. (A chuck roast is really fatty--good flavor, but you gotta drain the grease.) Once the grease is skimmed add water or more beef broth to total the liquid required in the recipe. Also, almost all the frozen mixed veggies in the store have carrots already in them--obviously you don't need to add fresh carrots if they're already in there. I ended up just adding some frozen corn, green beans and peas seperately. This was really meaty, I guess cause normally I add a pound, pound and a half of meat to my soup/stew, and this calls for a three pound pot roast. You could use a smaller roast but my family thought the extra meat was the best part.
