Grandma's Harvard Beets

These were amazingly good! I only used one can of beets, shoestring cut, since there's only two of us to feed. I made the full amount of sauce, though. Used beet juice instead of water. I didn't see any need to simmer it for 30 minutes though, I just let it heat through and then simmered for 5 minutes or so until everything else was done. I forgot to stir in the butter, so I just put a spoonful on top of my serving. I will definitely make this again.

Great Grandma's Peach Cobbler

I was so puzzled when I mixed up the flour, sugar, and egg since it was dry and crumbly. The recipe said to "pour" it over the peaches, so I thought it should be wet, like batter. But, I dumped it on top of the fruit and spread it out. Poured the butter over and made sure it was all covered. I used my 9 or 10 inch deep dish pie plate, and it just fit. It was fantastic! My husband loved it, too. I might try adding a little cinnamon next time, but it's 5 stars as written. I love the old time recipes. My mom's cooking was from the 40s and this tastes like something she would have made. Simple and tasty, and easy to make from simple, everyday ingredients. Thank you for sharing this! Your great-grandma would be proud.

Pineapple Upside-Down Cake IV

This is an excellent cake. I didn't use walnuts, and I've made it with and without the cherries. I've made it with pineapple tidbits, and with crushed, and we liked the crushed version better. Only change was that I use all of the juice from the can, about 2/3 cup. So good, and not difficult at all. Definitely not using a mix in the future.

Graham Cracker Crust

The taste and texture of this was wonderful! I had a little trouble getting the pie out of the pan, so I might butter the pan next time. (I have a glass pan, so it might not be a problem if you have a non-stick pan.)

Guam Fried Rice

This was sooooo good. I reduced the amount of everything since I was only cooking for two. Used about 6 slices of bacon, 1 cup frozen peas and carrots (cooked in the microwave first) inrtead of sliced carrots and snow peas, and sprinkled soy sauce on to taste. I might try it again mixing some soy sauce into the rice while it's still in the skillet, but it was fantastic as it was!

Donut Muffins

These were great! I halved the batter recipe and got 12 perfect mini-muffins. I only dipped the tops in butter and sugar-cinnamon to be less messy, and they were still outstanding. We ate them warm.

Island-Style Fried Rice

I used Spam Lite, and left out the sausage. I sauteed two teaspoons of minced garlic in the oil before adding the Spam. I also sauteed the thicker pieces of green onion, and added the lighter green top pieces at the end. The pineapple juice & teriyaki sauce substitution that others suggested was great (my husband is not a fish fan). Pearl rice tastes great in this! I'm not much of a cook, but this was easy and turned out great.

Garlic Chicken

Fantastically good! I used boneless, skinless thighs because I hate white meat. Baked about 20 minutes, since they are thinner than breasts. I needed a little more bread crumbs, I used less than one slice of bread, though. It was super, so tender and juicy, and very flavorful. Easy, too.

Refreshing Limeade

I used 4.5 ounces of juice, and 16 packets of Splenda. (I bought the Costco sized box, so it's not worth it to go buy the granulated Splenda.) Filled up the 2 qt pitcher with water, poured it over ice. Plastic squeeze limes of juice were on clearance for .39, so the whole thing was pretty cheap, and delicious. For variety, add a tablespoon of cherry syrup. Now I need to go back and get some more of those clearance limes... :)

The Original Fantasy Fudge

I've been making this for 30+ years, and I've never had it not set up. I've done both the microwave and the stove top versions. I made some today on the stove top. I used a large pot, more like a dutch oven than a saucepan. Always get it to a full, rolling boil before starting your timer (a rolling boil being one that boils vigorously even when you're stirring). Give it the full five minutes. I've never used a thermometer. I like to pour it into two 9 inch pie pans when I'm giving it away as gifts.

Slow Cooker Pulled Pork

I have a small crock pot, and only two of us to serve, so I used a one pound tenderloin, cut in half, and one cup of root beer. Added BBQ sauce by sight and taste, less than a bottle. It was awesome! UPDATE: I made this again, with a cheaper cut of pork loin. It was still good, but the tenderloin was so much better!

Chocolate Covered Bacon Strips

Excellent! My only advice is to open all the windows because bacon smokes in the over. But it was sooooo good. My hubby would like it a little bit sweeter, so next time I'm going to try half milk chocolate.

Southern Pork Tenderloin

This was so good! I didn't have any Panko, so I used the crumbs from two slices of bread, and left them spread out on a plate all day to get really dry and crunchy (it's hot in my kitchen). I did add 1/2 tsp. salt, too. It was so good, and quick to make. I will definitely make this again.

Mock Chicken Fried Steak

This was so good! I had 1/2 lb of hamburger for two people, so I only added 1/4 cup crackers, since I didn't need to stretch it so far. I didn't have any parsley, and I don't like chili powder, so I added a dash of garlic powder and a dash of onion powder. It was plenty salty from the crackers,so I'm glad I didn't add salt. I fried them in 2 Tbls oil and 1 Tbls margarine. I've never been a fan of hamburger steak, but I'll be making this again! Hubby wolfed his down. :)

GA Peach Pound Cake

Really, really good. I don't think it needs any additions, it was light and tasty just as it is. Half the recipe bakes up great in a loaf pan. (8x4 standard size). I used Baker's Joy, but next time I'm going to try the butter and sugar method. Like another reviewer, I baked it for 60 minutes at 325. (I used a glass pan.) I used frozen peaches, can't wait for fresh to come into season. I measured AFTER they were chopped. I wish recipes would be more specific about that. My hubby wants to try other fruits in in!

Microwave Popcorn

I only use 1/4 cup popcorn in a lunch bag. No oil. It's great without it, especially since I used to have an air popper. This tastes just as good, doesn't take up room for the popper, and easier to clean up.

Easy Authentic Mexican Rice

This is really good! It has a lot of tomato flavor, maybe a little too much, but that's probably just my taste, I'm not a huge tomato fan. It has a nice, savory flavor without hot spices. I thought maybe 1/4 cup was too much oil, so I started with half that amount, but when I added the powders it soaked it all up and I needed the rest. It wasn't oily when it was done, either. Chicken broth came in a 14 oz can, and I measured out 1.5 cups, but ended up using the rest. The rice wasn't quite tender without it, maybe because I used silver pearl (medium grain) rice. It went great with chicken enchiladas. I will definitely make this again.

Rolled Dumplings

Almost like Grandma used to make! She never measured anything, so her recipe is hard to follow. I made half a batch, except I used the full 1/2 cup milk. No problems rolling out. Mixed them up in my Little Oskar food processor. Definitely need to roll them thin. They were very good and I wanted more, but a half batch was plenty for two people.

Irish Soda Bread from County Cork

This was great. I used only one cup of raisins, and baked it 45 minutes in a 10 inch, deep-dish pie plate. It was really hard to mix that much flour into such a small amount of butter, next time I may use the mixer. After mixing in the milk and egg, I had a lot of dry flour still in the bottom of the bowl. I finally mixed it up with my hands, and patted it into the pan. We ate it warm, and it had excellent taste, with or without butter. Will definitely make it again.

Bella's Rosemary Red Potatoes

Very tasty, and easy, too. I used 2 potatoes, 2 Tbls butter, 2 Tbls olive oil, and a big sprig of Rosemary. Baked in an 8 inch square dish. It was just right for two people. I didn't stir, I just placed the wedge in the butter mixture on it's side, turned it over so both cut sides were coated. Then I sprinkled on the salt, pepper, and rosemary. I didn't stir during baking, either, so they came out looking pretty. I'm not crazy about potatoes, but these were good.
