Easy Morning Glory Muffins

Delicious. I didn't have an apple so I added one mashed banana instead. I also subbed 1 cup whole wheat flour for a cup of the white and 1/2 c apple sauce for half of the oil. Finally I topped mine with oats. This made 16 large muffins and I needed to cook them for 24 minutes.

White Bean Salad

I omitted the cucumber and red pepper because I didn't have them on hand. I also used sun dried tomatoes and black olives instead of the fresh and green and the salad was still delicious. The mustard dressing really livens up the beans and compliments the other ingredients.

Apple Carrot Muffins

The only changes I made were to use bran flakes from the bulk section instead of bran cereal and I added raisins. They turned out wonderfully.

Focaccia Bread

I made this to eat with seafood stuffed shells and it was the perfect herby partner. I followed the recipe exactly except the baking method - I made the bread in an oiled cast iron pan. Since there were only three of us for dinner, I plan to use the remaining bread for sandwiches today.

Kielbasa and Kidney Beans

This was an excellent base recipe that I modified for what I had on hand. I used chorizo, yellow pepper and red kidney beans, and started with a few chopped potatoes to temper the spice of the sausage. Like others, I used half the brown sugar and I also omitted the steak sauce, since I didn't have it. The result was warm, slightly sweet and spicy comfort food, perfect for winter.
