Cucumber and Tomato Salad

Fantastic, refreshing salad. I actually got my family to eat Tofu!! A miracle, believe me. A super easy and quick recipe.

Chutney Chicken

Very easy recipe. I was a little shocked how expensive chutney is!!! I couldn't find a 12 oz. jar, so I had to purchase 2 9 oz. jars, an over $10 cost! I used half Major Grey's and half Hot Mango and the flavor was very nice. You can't get any easier than this recipe. I also used boneless, skinless chicken thighs. So easy and simple.

Peppy's Pita Bread

I'm reluctantly giving this four stars. Only 1 of 8 puffed up and 2 of 8 softened. But the 2 that were edible tasted great, so I probably did something wrong in the process. I will more than likely be purchasing my pita bread, because this was very time consuming and the end result was a bit disappointing.

Beef Tenderloin With Roasted Shallots

FANTASTIC!!! I added a bit more beef broth to the gravy and cooked the roast until the thermometer hit 140 degrees. It made enough gravy for the mashed potatoes I served along with the roast.

Brandied Candied Sweet Potatoes

This was not a hit with my family and I. There was way too much brandy and the dish was very unattractive. Maybe roasting the potatoes and using less brandy would help. I'm not sure that I would bother trying to make this better though.

Butternut Squash Soup

Though this is a very easy recipe, the results do not warrant making this again. The kids would not eat anymore after the first bite. Even my husband (who will eat anything!) didn't really care for it. Personally I thought it was OK. It does need more water however, it was too thick with just 3 cups. I'd like to add that I always use the highest quality ingredients and still this recipe lacks appeal. Sorry, I know I am a minority on this.

Jay's Jerk Chicken

I started making this recipe without reading the instructions, I just threw all the ingredients in a dish to marinate. I then realized that I was supposed to blend all the ingredients together. Oops! Well, we grilled it up without bothering to blend it and it was fabulous. So, in essence, I made it much easier and I didn't have to face the green/brown funky look that everyone talked about in their reviews.

Mendocino Chicken Salad

FAB salad! I could not find smoked chicken in the grocery store, so I subbed smoked turkey from the deli dept. instead. It turned out great. I've made this several times, I also subbed the basil with dried Italian seasoning and the results were very good. Try it, you will love this.

Dad's Excellent Scallops

Mouth-watering!! This is a truly excellent recipe. I added garlic and lemon juice to the melted butter and sprinkled on Old Bay before wrapping the scallops. I grilled them in a grill basket rather than bothering with toothpicks or skewers. We devoured these!!!

Barbeque Halibut Steaks

Incredible! This sauce lets the fresh taste of the halibut shine through without masking it. I wish I would have bought more halibut because everyone inhaled theirs and wanted more. :)

Asian Chicken Salad

A very nice salad, however I would double the amount of dressing and forget about the rice noodles. They were a disaster to prepare and the salad would be much better without them. Somehow frying noodles in oil to add to a great healthy salad just seems wrong.

American-Italian Pasta Salad

Incredible pasta salad. Much better than the typical pasta salad with oil/vinegar dressing. This creamy dressing really stands out and makes this salad 5 stars. I brought it to a 4th of July party and it was the first thing emptied in the buffet line.

California Grilled Veggie Sandwich
