Best Spanish Rice
Made it per recipe. It was really bland. If I could recommend somethings to add it would be: salt and a dash of lemon or lime. You could probably add some fresh cilantro too. It is lovely that it is so easy to make, but it definitely isn't as flavorful as the Spanish-Puerto Rican rice my mom makes. I think I'll stick to her more complex recipe.

Slow Cooker Macaroni and Cheese I
I made this for a company and they loved it. However, I left out the eggs, cut the cheese down to 3 cups and cooked it on high for 3-3 1/2 hours, and I did not cook the pasta first. I did not need to add any additional liquid. I did not stir or lift the lid during cooking.

Delicata Creamy Squash Soup
Delicious! Made it from organic CSA box and will make it again. I didn't have heavy cream and so I found a substitute online that worked just fine: mixed 3/4 c milk, 1/3 c melted butter, with 1 tbls flour. I also used a pre-made veggie broth (store bought) and so I didn't add any salt and it didn't miss it at all. I also softened the squash in the microwave instead of in the oven- about 5 minutes in a bowl with a little water to steam. Thank you for a lovely recipe!
