Veggie Vegetarian Chili

I loved this recipe for the Chili. I decided to modify my version a bit. Instead of using the bean liquid, I drained each can of beans (I used garbanzo beans as well) to reduce sodium and then cooked the Chili wit Veggie broth. For Candida cleanse diets (which I am on now), you can omit the mushrooms, and instead of using canned tomatoes, just cut up fresh tomatoes with the juice. I also added one green fresh jalapeno pepper to give it some zing. Thanks for an awesome recipe!

The Best Vegetarian Chili in the World

I love the simplicity of this recipe. As a vegetarian on a strict Candida cleanse, I was unable to use Veggie Ground Round. I omitted the carrots but loaded up on every type/color of pepper...be careful not to go too heavy with Cumin on this recipe. I also added diced fresh tomatoes and veggie stock for the beans to slightly simmer in. I have made this dish 2 times in the past 2 weeks because it is that good and that easy. If you forget to use a Jalapeno pepper, just add a tsp or red chili flakes which give it a nice zip. This recipe is easy, hearty and freezes great! Thank you!

Vegan Split Pea Soup I

I love all the natural ingredients in this recipe and the inclusion of Barley. Though I was very thrown off by the reviews as many people stated that the soup turned out too thick. I followed one review that said to throw everything in a crock pot and cook on high for 3 hours. I did just that-3 hours later the peas were still crunchy...I used dried split peas. I then added 3 more hours and the peas never softened up. I was very disappointed. I now have the soup in an actual pot where it has been cooking for 2 MORE hours and the peas are still not soft. I think next time I will just stick with the original instructions to use a big pot and simmer on the stove. Other than that, I am really impressed with the overall flavor, and I am sure when the peas are cooked, it will taste even better! Well done!

Stuffed Peppers My Way

Since I cannot eat cheese, I nixed this and used egg to have everything stick together. I also used short grain rice and added extra veggies to the mixture. The flavor was amazing and the idea of roasting the peppers was very smart! I would have cooked my rice just a bit longer as it was chewy but the over all flavor was awesome! Instead of feta, one could try parmesan cheese as well...or throw in some lentils or beans for protein. Thanks :)

Veggie Pot Pie

I made my own Vegan variation on this-using pretty much the same ingredients, except added some corn, sweet potatoes and peas....I only used just over 2 cups of Veggie broth and simmered in high to get a fast sauce reduction. I used a premade flour pie shell and instead of using a crust on top, made a mashed potato crust with Vegan butter, Vegan cheese and rice milk...topped it off and voila. This recipe is an AMAZING and easy to prepare....and I love that the fat content is very low and the veggies on their own with just the broth and soy sauce concoction are incredible!! Thanks for sharing!!

Real Hummus

I just tried this today following everything listed (except I went half tsp of salt and added cumin), used my blender and it barely got through blending all of it...as a result, it all came out chunky and thick. The taste was far too sour with the lemon juice and I think adding ANY salt is a bad idea because it came out very salty...not a fan :(
