The Best Fresh Tomato Salsa

This is a great recipe - make it all the time in the summer. I typically leave the bell pepper out. I always chop everything in the food processor to make it quick. Just pulse in the processor a little to chop. It gives you some liquid which I like but not too soupy!! Good and healthy - can't beat it!

Strawberry Angel Food Dessert

I didn't read all the reviews on this one however my "go to" potluck recipe is this one except instead of using strawberries, use a can of cherry pie filling. I put everything together but put the cherries on the top (not layered but you could if you like the looks of it). It looks pretty and taste delicious. My recipe is called "Cherries in a Cloud".

Italian Cookies II

I loved these cookies! They were so easy to make. I doubled the recipe because I was making them for a wedding. Got 7 dozen total. The cookies are cake-like but so moist. They are good plain but the icing adds to the flavor. Only change I made was on icing. Instead of milk, I added orange juice. Had to add a little more liquid (OJ) than called for to get the consistency I liked but the icing still hardened enough to stack nicely for freezing until wedding day. Instead of spreading the icing like the original picture shows, I used cake bag/tip and squeezed a decoration on top of each. They were pretty. Will definitely put these into my norm for Christmas cookies.

Tuna Noodle Casserole from Scratch

Loved this recipe although I did add a little more flour/milk to get a larger quantity of sauce so oven baking didn't dry it out. I also added green peppers when cooking the veges. My mom used to make hers with peppers. Adds to the flavor. I used Ritz crackers for the topping instead of bread crumbs.

Overnight Blueberry French Toast

I was a little disappointed with this recipe. Seemed a little bland for my liking unless you put a lot of the blueberry topping on it which was wonderful. No one in my house went back for seconds and they are all blueberry fans. I wouldn't make it again.

Oven Pot Roast

I love this recipe however I always make this in a crockpot. So nice for a weekday when busy or a Sunday dinner. I follow the recipe but use the entire envelope of soup mix - no reason to waste it, right? I use water most of the time instead of the vermouth - still just as good. I add carrots and potatoes right at the beginning. No need to brown the meat - one pot cooking! Cook 8-9 hours on low. I usually add a little bit of corn starch 10 minutes prior to serving to thicken the sauce. YUM! Very good to serve with egg noodles.
