Down Home Macaroni and Cheese

Reviewed: Feb. 25, 2006
Wish I could give it 10 stars! Made it, using Breze's tweaks, and took it to work for a potluck (double rcipe). It was the biggest hit of the year! The Accounting Section of the King County (WA) Department of Assessments would probably give it 20 stars! Thanks for a real WINNER...tonight I'm making it again so the hubby can taste this wonderful stuff! You rock Kraft and Breze!!!!!!!

Mexican Bean Salad

Reviewed: Feb. 5, 2005
Great salad!! Tried to make it just as printed, but when someone mentioned adding black olives I couldn't resist (one of my weaknesses). And I did do just 1-Tbsp sugar but to make up I used 2 garlic cloves!! Your combo of ingredients made a super salad!...but OLIVES....yes, yes, yes!! Thanks for the recipe Karen.

Filet Mignon with Rich Balsamic Glaze

Reviewed: Jan. 30, 2005
Definitely a 5-star recipe!! Had two filets marinating in olive oil and garlic pepper and was undecided on what to do with them when I stumbled upon your recipe. Used a good cab/merlot as the red wine and the glaze on the steaks was heaven!! My hubby said 'forget BBQ-ing filets, from now on this is the way he prefers them!' Many Thanks Linda!

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Oct. 13, 2002
Tried this for the first time last evening....YUMMY! And very easy to put together. Everyone who tasted it gave it 5-stars. However I did not bake the chicken but poached it in a bit of water seasoned with salt, taco seasoning and Emeril's Essence (saving time and energy costs). Next time I may kick it up a notch and use half pepper jack cheese and half regular jack...I like spicy stuff! Thanks for 'a keeper' Tracy!

Minestrone Pasta Salad

Reviewed: Sep. 8, 2002
Good pasta salad! The only thing I might change next making is using 2 or 3 chopped, fresh tomatoes plus a couple sprinkles Italian seasoning. The canned Italian tomatoes have too much sugar for my taste and tend to overpwer the Italian dressing. But that speaks to my taste. Over all the amount of vegi's and 'good for us healthy' beans should entice people to serve this as a type of salad main dish. In any situation, if you fix this as directed.....I'm sure you'll enjoy. P.S. This also works well with fat-free or reduced fat Italian dressing.

Corn and Zucchini Melody

Reviewed: Sep. 8, 2002
I realy enjoyed this as a side dish to the Burgundy Pork Tenderloin (from this site) we had for last evenings dinner. Would never have thought sauteing this combo in that tad amount of bacon drippings could add so much flavor.

Burgundy Pork Tenderloin

Reviewed: Sep. 8, 2002
Thank-you Kathleen! I made this pork tenderloin last evening (following the exact recipe) and I must agree with 99% of the other reviwers, it is delicious!!! I certainly can't see where the other 1% found fault. Using a 'good' red wine might help those who thought it was too winey. The only thing I would change next time is using brown gravy mix. It was my first experience with brown gravy mix and my last. I was able to doctor up the sauce to make it edible but maybe using something like Knorr's Bernaise Sauce might be better. Or as another reviewer mentioned just thickening the wine and pan juices with cornstarch. Since I had opened a nice Cabernet for the cooking (and had the rest with dinner), the basis of the sauce was quite yummy and I probably should have went with a thickener. Five Stars for sure on the pork. Has anyone ever tried making this with port? Maybe that will be my next attempt, as I do LOVE port!

Pineapple Pretzel Salad

Reviewed: Jul. 20, 2002
This dessert is so excellent! Rich and refreshing! The first time I made it the pudding mix did not firm up the pineapple very well, so I added extra pudding (which made it quite sweet). The second time I drained a portion of the juice from the can and it worked perfectly. Thanks for the variation Erin.

Cheesy Fried Potatoes

Reviewed: Apr. 5, 2002
Quick, easy, delicious!!! What more could you want? For those who think it's on the greasy side, I drain all the bacon grease off leaving just the browned bits (where all the flavor is anyway)and then proceed with the recipe. It doesn't taste at all greasy but still retains the yummy bacon flavor. Thanks Marcia
