Simple Whole Wheat Bread

I was really excited to make this based on all the glowing reviews. I had to slightly tweak things as I only had enough yeast, etc. for one loaf. Maybe my measurements were a little off, but I can't think it would have mattered THIS much. The bread was REALLY dense and left a strange aftertaste. Husband, who's been begging me to make bread for weeks, only ate a slice. Said it tasted like there was something missing . . . ended up throwing half the loaf away. We'll keep looking, but appreciate the attempt (and my apartment smelled delightful, which makes it worth trying in itself ;)).

Apple Betty

I'm not giving this recipe a terrible rating because I'm sure I must've done something wrong to get the results I did. Okay flavor, really BAD presentation. I tried to about double everything - put the apples in the orange juice as I was slicing them so they wouldn't brown. Either I used too much orange juice (I only used a little over 1/3 cup) or having the apples in it caused them to release water while cooking because when I pulled this out of the oven it was SWIMMING in buttery water. I kid you not - rocking the pan from side to side make it look like the apples were floating on top of water. The topping had all melted and pretty much disintegrated in the water and it was just . . . ugly. And REALLY REALLY sweet. I even drained the watery part and just gave husband the apples and ice cream and he only ate about three bites. I'll probably try a different recipe next time since I couldn't make this one work. Sorry. :(

Truck-Stop Buttermilk Pancakes

Yummy! I had to scale this recipe *way* down as there are only two of us at home and was a little nervous when the conversion was kind of funny (1 1/4 eggs?), but I guesstimated as best I could. They were fabulous! My husband's not even a huge pancake fan and he said these were excellent. They weren't hugely thick like some pancakes, but they fluffed nicely and were oh so good with real maple syrup! Thanks for the wonderful recipe - it'll be used often.

Grandmother's Buttermilk Cornbread

Made this recently to go with some chili I was making - it really hit the spot! Soft but not too crumbly. I like cornbread somewhat sweet, but I didn't find this overly sugary-tasting. My husband made honey butter to put on and it was a smashing success! Thanks for a terrific recipe. :)

Pumpkin Cheesecake I

I was really excited about this recipe based on the reviews . . . but I wasn't overly impressed. As my husband said, "I have no idea if I'm eating cheesecake or pumpkin pie!" With all the extra time it took putting this together, I was a little disappointed. I liked the crust, but it was fairly strong tasting. Thanks anyway for a great idea! :)

Justin's Hoosier Daddy Chili

Mmmm! I'm not into to really hot chili so I only put in about 3 Tablespoons of the chili powder instead of 5, and didn't add any cayenne. It still had a kick, but in a very flavorful way! I used the pinto beans; next time I think I might put a can of them in and a can of red kidney beans just for some extra color. I put it in a crock pot and cooked it all day - chili was kind of soupy at first but I left off the lid for the last 1 1/2 hours of cooking and it was great! Perfect with cheddar cheese and cornbread. I think I'll enter this in a chili cookoff myself soon . . . giving credit where credit is due, of course. :) Thanks SO much - this is some of the best chili I've ever had, and much better than a lot of restaurants make. :)

Pumpkin Cookies I

Wow! I made these just as described but substituted cinnamon chips for the butterscotch - I even special ordered them from a grocery store around here, thinking they'd be just the right touch. I was right! Sweet and full of spice, these cookies are perfect for autumn. Thanks for a wonderful recipe! Cooking time for me was 12-14 minutes (12 for one baking sheet, around 14 for two) P.S. Some of my cookies didn't spread out much at first, but I found that if I flattened them slightly right before putting them in the oven they looked just fine. :)

Smushed Apples and Sweet Potatoes

Looked very strange but tasted great. :) This is a keeper. I went for the 1/4 cup brown sugar, packed, as my husband and I like it nice 'n sweet. We had a little extra as our main course instead of a side dish and thought that was yummy!

Pork Butt Roast with Vegetables

This is *so* good. I was generous with the seasoning for the meat before I seared it. I used vegetable broth and some beef boullion cubes for most of the broth and it was really good. Mmmmmm! :)

Purple Monstrosity Fruit Smoothie

Used some orange juice, some milk. It was tasty! Was a little tart for my mood so will try it with the yogurt next time as recommended. I *love* blueberries and bananas so this was a nice breakfast. :D

Basil Chicken and Pasta
