Roasted Vegetable and Couscous Salad

This is great! I did use quinoa instead of couscous. I also added a beet because I needed to use it, and I used olive oil rather than vegetable oil. Absolutely delicious. One of the best salads I've made!

Grilled Salmon With Cucumber Salad

Absolutely delicious! I was worried that the salmon itself wasn't "dressed up" enough, but the cucumbers were the perfect compliment and there was just enough sauce to add flavor but not take over. Really nice recipe!

Buttermilk Wheat Bread

Broccoli with Garlic Butter and Cashews

Yum, yum, yum! I used frozen broccoli and steamed it. Only used 3 Tbsp of butter and it was plenty. I also thickened the sauce with 1 Tbsp of cornstarch. My family really enjoyed it!

Slow Cooker Enchiladas

Very, very good! I used 1lb of beef and then added a can of black beans to make it more filling. Doubled up on the tortillas on that layer. Also used my own seasoning instead of the taco packet. We enjoyed it very much.

Bahama-Mama Pork Chops

Well this is one of the best pork dishes I've found on this site! My 4 year old said it's the best meal I've ever made - very high praise from someone who can't remember one meal from another! But I'll take it. I made it exactly as written and served over rice. Just great!

Peanut Butter Chews

Oh my - these are spectacular! I used 5 cups of cereal and only about 1/4 cup of butterscotch chips. I spread these out in a greased pan and then drizzled the melted chips on top so we'd have bars. It doesn't get much better than this! I, too, only boiled the syrup/sugar mixture for 30 seconds and these stayed nice and soft. Takes very little time or effort and the flavor is out of this world!

Simple Savory Pork Roast

This was really good. I rubbed the roast with olive oil as suggested by others, and I also used dried rosemary. I only used 1 tsp of garlic salt. It had a great flavor and was very simple.

Chocolate Covered Cherry Cookies II

Heavenly choco-cherry goodness! What a perfect cookie. I do recommend that you make them fairly small so the cherry doesn't get lost. I added an extra egg and then had to stick the dough in the freezer for about 15 minutes so I could roll it into balls. I used 6 Tbsp of cherry juice in the frosting and used most of it since I spread it on the cookie out of the oven as well as spooning it on before I baked them. Store in a tupperware container in the fridge and they stay soft but the frosting doesn't melt. Delicious!

Unbelievable Chicken

I really struggled over whether to rate this a 4 or 5, but 5 won out! It really is very good. I used dijon mustard and only 4 Tbsp of oil. I don't keep fresh lemons and limes on hand, so I used 1 Tbsp lime juice and 1 tsp lemon juice. The flavors all blended together nicely and I enjoyed the slightly sweet taste from the brown sugar. It's a keeper for sure!

Candy Cane Cocoa

What a yummy mug of cocoa! Great chocolate flavor with subtle peppermint too. We crushed the candy canes very fine so they would dissolve. Came out great and was enjoyed by everyone!

Antipasto Pasta Salad

Simply delicious! I put this together the night before and then added the dressing about 3 hours before we ate. Used cucumber instead of peppers because I forgot to buy them. I also used about 12oz of pasta rather than a full pound. Otherwise made as written and it's just great! It makes a massive amount - plan for a group or to share.

Pasta Primavera with Italian Turkey Sausage

Yummy! I halved the recipe for my little family of 3 and it still made a ton. I didn't measure how much oil I used, but it was probably close to the full amount called for and I wouldn't have wanted less. I used way more parmesan cheese than called for because we like things cheesy. I did not have any fresh basil, so I just sprinkled dried basil liberally over the veggies. Really great, light tasting recipe!

Ham and Cheese Bowties

Wow, I can't believe I'm rating this "kid meal" a 5 but it deserves it! I loved this! The sauce is creamy and perfect and this is just a delicious meal. Not fancy, but certainly filling and great comfort food. I made exactly as written except I added a bit more ham. Yum!

Amy's Delicious Turkey Burgers

Yum! I took the advice of GodivaGirl and added 1 Tbsp each of worchestershire sauce and steak sauce. Only used about 1/2 tsp of red pepper so my 4 year old would eat it. I do not like cheese crackers, so I used Ritz and that worked great! Topped with cheese and they were perfect!

Pan Seared Lemon Tilapia with Parmesan Pasta

What a great little recipe! I did increase the amounts of seasoning to 1/2 tsp of each spice for the fish - except cilantro which I didn't have. For the pasta I used 1/8 tsp of each spice for my "pinch". We enjoyed this very, very much. The flavors mingle together beautifully. The best tilapia recipe I've found so far on this site.

Rhubarb Cobbler

So delicious! I added about a cup of strawberries and that helped cut the tartness of the rhubarb. I thought this was perfect and the crust was especially good. Only change was to add about 1 Tbsp of water to the fruit mix.

Giant Chocolate Chip Cookie

Yum, yum! Very easy and great flavor. I used two 9 inch pie plates and it worked beautifully. You don't need to worry about the dough spreading because of the higher sides. Tastes great frosted!
