Polenta and Vegetable Casserole

This was OK. My son wouldn't eat it. I probably should have baked the polenta a bit first because it was pretty soggy. I used zucchini instead of eggplant. Really enjoyed the olives on top. Overall not something I'd make again though.

Chocolate Cupcakes with Bailey's Creme Frosting

I made this as a cake in a 9x13 pan and it was very good! The frosting was a big hit, although I did half it since I was just frosting a sheet cake. Great chocolate flavor and a nice denseness.

Eggless Tofu Spinach Quiche

This was not good. Way, way, way too much spinach. I increased the tofu to 12oz per other reviews. There was no mistaking the tofu for eggs. Maybe I did something wrong here, but we couldn't eat it.

Slow Cooker Island Beef

We liked this well enough, but it was surprisingly bland. We served over brown rice. I liked all the veggies in there, but I'm not sure I'll make it again.

Sweet Potato Chili

Delicious! I couldn't find stewed tomatoes with chili seasonings, so I just used regular. It was fine. Didn't have any corn so I left that out and I really don't think it needs it. This was the perfect combo of spices and we enjoyed it a lot!

Quinoa Black Bean Burgers

These were just great, although a bit dry after baking them. I increased the quinoa to 1/2 cup (you need to then increase the water to 1 cup) but otherwise made as written. I baked for about 20 minutes at 400 and that was too long. Think I'll just try frying them next time. I topped mine with tomato and avocado and it was really good!

This was pretty good. I only used 1 Tbsp soy sauce. Next time I'd add some veggies - maybe carrots and broccoli - to make it a bit more interesting.

Tofu and Veggies in Peanut Sauce

Spectacular and so quick! I added a bit of garlic powder and made everything else as written. Wasn't sure what kind of vinegar to use so just went with regular white and that was fine. Topped with chopped peanuts. Really, really delicious!

Pesto Polenta Lasagna

Really good, although I added to it based on other reviews. I did a layer of polenta topped with pesto, spinach, roma tomatoes, ricotta cheese (an entire tub) and all the sauce. Then I put the final layer of polenta on top and baked as directed for 25 minutes. Topped with mozzarella and parmesan cheese and broiled for about 3 minutes. It was very, very good.

Hmmm....I'm not convinced that the flour really added anything. It was difficult to get it to mix in. Probably wouldn't make it this way again.

Tofu Tacos I

Fantastic! Even my son ate this. I just used extra firm tofu and I sauteed in olive oil instead of veg. oil. Didn't have a lime, so I used 2 Tbsp of lime juice. This will go into the regular dinner rotation!

Tofu with Tomatoes and Balsamic Vinegar

I really enjoyed this recipe, but my family...not so much. My son felt it had way too much vinegar. I disagree, but I do love balsamic. I used a green and a yellow pepper and we served over brown rice. Probably won't make again because the family didn't love it, but I would recommend it if you're looking for a tofu dish.

Spicy Avocado Chicken

We enjoyed this, although I made several changes. I grilled my chicken rather than frying it and I added garlic powder and onion powder. For the avocado part, I left out the onion but added some lemon juice and salsa and just made it into guacamole. Fabulous flavor!

Cod with Italian Crumb Topping

My biggest advice on this recipe is to use 3oz fillets. Mine were much larger and the topping just wasn't enough for the larger fillets. I did take the advice of others and used 2 Tbsp mayo mixed with 1 tsp lemon juice in place of the egg. I liked the flavor of the topping well enough.

Soft Christmas Cookies

Really delicious - really soft - really easy! I took the advice of others and cut the flour down to 3 cups, baked at 350 for 8 minutes, and they are perfect! Don't roll them out too thin; 1/4 inch is great.

Eggnog Quick Bread

Fabulous! Love this bread. Added 1/2 a cup of eggnog but otherwise made as written. I would suggest creaming the butter and sugar before you add the rest of the wet ingredients.
