Mashed Sweet Potatoes

Very easy and delicious. The maple flavor is subtle but adds something different. We used heavy cream rather than milk.

Chicken Salad with Bacon, Lettuce, and Tomato

What a nice salad! We made it into wraps and topped with monteray jack cheese. Yum! I was lazy, so I used bacon bits instead of actual bacon. Added a nice saltiness. I also cut the mayo down to 1/2 cup. It was plenty.

Chocolate Cookie Buttercream Frosting

I was disappointed with this frosting. There was too much powdered sugar taste and not enough chocolate taste. I did appreciate that it didn't make a ton because I was frosting a small pan of brownies, but that's not reason enough for me to make it again.

Sunshine S'more Cupcakes

I have to agree with other reviewers that there's not enough chocolate and working with the marshmallow fluff is very difficult. I also made the cupcakes as directed on the cake package and used about 3 full graham crackers. The final taste wasn't worth the trouble they took.

Sweet Potato French Toast

This is a fun way to sneak some veggies into your family's diet! You can't even taste the sweet potato. These are good. I did add 1/2 tsp of vanilla and increased the cinnamon to 1/4 tsp. As a side note, sweet potato puree is easy to prepare in advance and freeze. Just broil a bunch of them and then puree in a food processor and package in 1/4 cup increments in a ziptop freezer bag. To thaw just place in a bowl of warm water for about 5 minutes.

Peanut Butter Heaven

You know, this wasn't great. It was very dry. I think you need to add another egg or not put in as much oatmeal. It's too much oatmeal. I could hardly taste the peanut butter. I'm bummed because it sounded awesome, just didn't taste that way.

Delicious and so simple! How wonderful! I did scale it back to only 6 servings but still used 1 full can of each soup. It wasn't too much sauce at all. We enjoyed it a lot!

Berry Rhubarb Pie

Delicious pie, although I used what fruit was on sale, so it was strawberry, blueberry and rhubarb. I love that the pie is versatile for you to use whatever fruit you want. My husband said he could have eaten the whole pie in one sitting! I do look forward to trying it with raspberries and blackberries and I appreciate finding a pie that only uses 2 cups of rhubarb, which is exactly the odd extra amount I had left! You could taste it but it wasn't overwhelming. Just added a nice "different" flavor. Made my grandma's pie crust, so can't say how this crust recipe is, but I'm sure it's also yummy!

Peanut Butter Pie

Well yes, this is quite yummy! I added a layer of chocolate pudding to the bottom of the crust, but it doesn't really need it. It is rich, but I found it perfect. I chopped up the candy for the top and that worked nicely. An easy pie that will impress guests!

Pot Roast, Vegetables, and Beer

This is a fairly good roast and it cooked quickly in the oven, which was nice. I personally didn't love the tomato paste. It gave it a bit of an odd flavor. And the veggies got too soft, which for some reason doesn't seem to happen in my crock pot.

Rio Grande Quesadillas

Good recipe, fairly easy. I boiled my chicken and then shredded it. The water seems like a lot at first but it does boil off. Made exactly as written except I baked mine for about 10 minutes at 350 rather than frying. I like the beans in here, and the cilantro give it a great flavor.

Summer Tomato Salad

Wow, I guess I have to disagree with most of the reviews on here. It does need a dressing. It's very "earthy" (as my husband) said without some kind of "sauce". I added some balsamic vinegar and was able to eat it then, but on it's own it's just too dry.

Tuna Cream Cheese Omelet

Well this is unique, and the flavor is pretty good, although the tuna overwhelmed the eggs. I used Egg Beaters, which I find easier to make into omelets than regular eggs. My husband and son wouldn't touch it, so it's not one I'll make again, but it's fun to try new things!

Cheeseburger Salad

Well this is just delightful! Lots of tangy flavor and so simple. It only took me about 20 minutes total. I didn't use 8 cups of lettuce. We just all put as much as we wanted in a bowl and topped with the burger mix. We got 4 servings, not 6. Yum!

Herbed Chicken and Fettuccini

This was very good, although I had to modify a bit based on what I had on hand. I used regular cream cheese (7oz) and a red pepper. I also used the entire can of chicken broth and then thickened the sauce with about 1 Tbsp of cornstarch. I used a very generous amount of pepper and about 1 Tbsp of Italian seasoning as well. Great option for chicken and fettuccini if you don't want alfredo!

Pan Seared Lemon Tilapia with Parmesan Pasta

What a great little recipe! I did increase the amounts of seasoning to 1/2 tsp of each spice for the fish - except cilantro which I didn't have. For the pasta I used 1/8 tsp of each spice for my "pinch". We enjoyed this very, very much. The flavors mingle together beautifully. The best tilapia recipe I've found so far on this site.

Giant Chocolate Chip Cookie

Yum, yum! Very easy and great flavor. I used two 9 inch pie plates and it worked beautifully. You don't need to worry about the dough spreading because of the higher sides. Tastes great frosted!

Ryan's Favorite Beans

I enjoyed this very much, but not everyone I served liked it. It's very, very sweet and the cider vinegar makes it quite tangy. My 5 year old wouldn't eat it. If I make it again I would cut down on the vinegar and increase the liquid smoke. I did use the lima beans and I have to say they were tasty, and I don't normally like them. They go nicely in this dish.

Nanna's Banana Bread

This is a fabulous banana bread! I added 1 more banana and think it needs that. I love mixing the "wet team" in the blender - how handy. This makes a very large loaf, so the 2nd time I made it I split it into two smaller loaves and baked for 45 minutes. Just great!
