Summer Squash Burritos

I am delighted with this recipe! I actually used it as a "starter" and added other seasonings. I used 1 yellow squash and 1 zucchini and we added garlic, cumin, oregano, and pepper. Topped with Monterray Jack cheese, tomato, and a bit of sour cream. Absolutely to die for! Great versatile recipe.

Ham and Shell Salad

This was a good salad, although on the dry side. There's really not much to the dressing. I could see the benefit of using a bottled salad dressing (I like the idea of the bacon ranch!). We did enjoy it and it's very light.

Peanut Butter "Snickerdoodles"

OK, this recipe really does make A LOT! I cut it in half and we still had more than enough. It's a good cookie, not the most fantastic, but darn nice! The peanut butter flavor is not strong but that's OK. I don't think I used a full 1/4 cup of dough for each cookie. I just used enough to cover up the candy bar and called that good. Make sure you use the sugar on top as it really makes the cookie!

Sour Cream Rhubarb Pie

I'm giving this a 4 because my husband says it's the best pie I've ever made. I thought it was just OK, but his rating has to weigh in too! He liked that it wasn't runny because of the custard. I thought the consistency of the custard was weird and I couldn't decide if I should eat the pie warm or cold. Hubby says warmed. The topping is very good.

Southwestern Pasta Salad

I thought this was quite good and the lime really added to the dish. Loved the black beans and corn! My husband, however, hated it. So I won't make it again, but I'm glad I tried it. I did dice up my garlic and cilantro and I used 1/4 cup olive oil and 1/2 cup lime juice.

Balsamic Chicken

This was very flavorful! I marinated mine for about 4 hours and then grilled it, which worked very nicely. I did not brush the marinade on the chicken as we grilled. It was plenty tasty without adding extra.

Mashed Sweet Potatoes

Chicken Salad with Bacon, Lettuce, and Tomato

What a nice salad! We made it into wraps and topped with monteray jack cheese. Yum! I was lazy, so I used bacon bits instead of actual bacon. Added a nice saltiness. I also cut the mayo down to 1/2 cup. It was plenty.

Chocolate Cookie Buttercream Frosting

I was disappointed with this frosting. There was too much powdered sugar taste and not enough chocolate taste. I did appreciate that it didn't make a ton because I was frosting a small pan of brownies, but that's not reason enough for me to make it again.

Sunshine S'more Cupcakes

I have to agree with other reviewers that there's not enough chocolate and working with the marshmallow fluff is very difficult. I also made the cupcakes as directed on the cake package and used about 3 full graham crackers. The final taste wasn't worth the trouble they took.

Sweet Potato French Toast

This is a fun way to sneak some veggies into your family's diet! You can't even taste the sweet potato. These are good. I did add 1/2 tsp of vanilla and increased the cinnamon to 1/4 tsp. As a side note, sweet potato puree is easy to prepare in advance and freeze. Just broil a bunch of them and then puree in a food processor and package in 1/4 cup increments in a ziptop freezer bag. To thaw just place in a bowl of warm water for about 5 minutes.

Peanut Butter Heaven

You know, this wasn't great. It was very dry. I think you need to add another egg or not put in as much oatmeal. It's too much oatmeal. I could hardly taste the peanut butter. I'm bummed because it sounded awesome, just didn't taste that way.

Delicious and so simple! How wonderful! I did scale it back to only 6 servings but still used 1 full can of each soup. It wasn't too much sauce at all. We enjoyed it a lot!

Berry Rhubarb Pie

Delicious pie, although I used what fruit was on sale, so it was strawberry, blueberry and rhubarb. I love that the pie is versatile for you to use whatever fruit you want. My husband said he could have eaten the whole pie in one sitting! I do look forward to trying it with raspberries and blackberries and I appreciate finding a pie that only uses 2 cups of rhubarb, which is exactly the odd extra amount I had left! You could taste it but it wasn't overwhelming. Just added a nice "different" flavor. Made my grandma's pie crust, so can't say how this crust recipe is, but I'm sure it's also yummy!

Peanut Butter Pie

Well yes, this is quite yummy! I added a layer of chocolate pudding to the bottom of the crust, but it doesn't really need it. It is rich, but I found it perfect. I chopped up the candy for the top and that worked nicely. An easy pie that will impress guests!

Pot Roast, Vegetables, and Beer

This is a fairly good roast and it cooked quickly in the oven, which was nice. I personally didn't love the tomato paste. It gave it a bit of an odd flavor. And the veggies got too soft, which for some reason doesn't seem to happen in my crock pot.

Rio Grande Quesadillas

Good recipe, fairly easy. I boiled my chicken and then shredded it. The water seems like a lot at first but it does boil off. Made exactly as written except I baked mine for about 10 minutes at 350 rather than frying. I like the beans in here, and the cilantro give it a great flavor.

Summer Tomato Salad

Wow, I guess I have to disagree with most of the reviews on here. It does need a dressing. It's very "earthy" (as my husband) said without some kind of "sauce". I added some balsamic vinegar and was able to eat it then, but on it's own it's just too dry.

Tuna Cream Cheese Omelet

Well this is unique, and the flavor is pretty good, although the tuna overwhelmed the eggs. I used Egg Beaters, which I find easier to make into omelets than regular eggs. My husband and son wouldn't touch it, so it's not one I'll make again, but it's fun to try new things!

Cheeseburger Salad

Well this is just delightful! Lots of tangy flavor and so simple. It only took me about 20 minutes total. I didn't use 8 cups of lettuce. We just all put as much as we wanted in a bowl and topped with the burger mix. We got 4 servings, not 6. Yum!
