Slow Cooker Enchiladas

Very, very good! I used 1lb of beef and then added a can of black beans to make it more filling. Doubled up on the tortillas on that layer. Also used my own seasoning instead of the taco packet. We enjoyed it very much.

Peach Muffins

This is a nice recipe. I made it into 2 loaves of bread. I would recommend adding another cup of peaches if you're making bread. I couldn't really taste them. I didn't find the cinnamon to strong at all and they have a lovely flavor, just not enough peach. Oh, I also added a 1/2 cup of milk.

Peanut Candy Bar Cake

Yes, this is quite good! My husband said it tasted like a soft Payday candy bar. I did add 1/2 a cup of peanut butter to the topping because my bag of chips was only 1 1/2 cups. Otherwise I made as written. I like the salty with the sweet and the softness of the cake layer. A hit!

Country Apple Dumplings

This is awesome! I was skeptical of the soda on it but it worked. We don't drink Mountain Dew, so I used Sprite instead. We halved the recipe and used 1/4 cup brown sugar and 1/2 cup white sugar. Really, really great!

Buttermilk Parmesan Potatoes

This is a fine recipe, although a bit dry. I cut the recipe in 1/2 but did still use a full cup of buttermilk. It didn't make that big of a difference. I ran out of parmesan, so I topped it with cheddar and bacon bits the last 20 minutes. That actually made it more flavorful, but as written it was pretty bland.

Zucchini-Raspberry Bread

This is a lovely bread. If you don't have self rising flour, you can add 1 1/2 tsp of baking powder and 1/2 tsp of salt with all-purpose flour. The flavors blend beautifully.

Baked French Toast

This is a fantastic recipe and I use it frequently. Always comes out perfect. You don't need to change a thing. You may want to place it on a cookie sheet because sometimes it boils over in the oven. It's really delicious!

Tasty BBQ Corn on the Cob

This is quite tasty and quite easy. I baked mine at 350 for about 22 minutes and it did not get soggy. If anything, it could have used more butter! A really nice combination of flavors.

Cherry Spice Cake

This is an excellent cake! It's very moist. Here's why you use 3 cake pans - the fruit filling makes it very heavy and dense. If you put all the batter in 2 pans (like I did!) your cake is going to seriously sink! Even with the sunken middles, it still tasted amazing! You really can't taste the cherry, but I did top mine with cherries and that added a lot. The frosting is great! I cut it in 1/2 and it was just enough to frost the cake with a little left over.

Brown Sugar Bacon Waffles

Hmmmm...different. It's actually easier than it sounds. It makes a lot! We never could quite adjust to having bacon in our waffles, but we did like them. Didn't love them, but enjoyed trying something new.

Summer is Here Triple Berry Peach Pie

This is a good pie, but I actually think it's a little too much variety of fruit. The raspberries overwhelmed most of the flavor and I really couldn't taste any of the other fruit specifically. I also didn't care for the nutmeg. It stayed pretty runny too. Now, I've really never met a pie I don't like, this just isn't one of my all time favorites!

Chocolate Covered Cherry Cookies II

Heavenly choco-cherry goodness! What a perfect cookie. I do recommend that you make them fairly small so the cherry doesn't get lost. I added an extra egg and then had to stick the dough in the freezer for about 15 minutes so I could roll it into balls. I used 6 Tbsp of cherry juice in the frosting and used most of it since I spread it on the cookie out of the oven as well as spooning it on before I baked them. Store in a tupperware container in the fridge and they stay soft but the frosting doesn't melt. Delicious!

Antipasto Pasta Salad

Simply delicious! I put this together the night before and then added the dressing about 3 hours before we ate. Used cucumber instead of peppers because I forgot to buy them. I also used about 12oz of pasta rather than a full pound. Otherwise made as written and it's just great! It makes a massive amount - plan for a group or to share.
