BBQ Chili Pasta

Reviewed: Feb. 19, 2010
Yummy! I used penne pasta because that's what I had and I added 1/2 tsp of cumin. Used a nice, tangy bbq sauce and it was really delicious. We topped with monterey jack cheese.

Raspberry Fudge Brownies

Reviewed: Feb. 18, 2010
The brownie and filling would be 5 stars (so awesome!), but I didn't really like the frosting. The frosting tasted best really cold, but then the brownie was hard from being in the fridge and I didn't like that as much. So, it's a solid 4 stars!

Sour Cream Enchiladas

Reviewed: Feb. 14, 2010
This was very easy but also very bland. It needs some serious kick added to it. Maybe salsa and cumin and garlic.... Just kind of boring as is.

Chili Cheese Dip I

Reviewed: Feb. 2, 2010
This is a great dip and it makes a lot. I used Mexican processed cheese and added 1 cup of salsa. We enjoyed it very much!

Heather's Cilantro, Black Bean, and Corn Salsa

Reviewed: Jan. 23, 2010
Been waiting a long time to make this and I finally had a party I could take it to today. It makes a massive amount, so plan for a crowd! It's very good, although not as flavorful as I would have hoped. Everyone really enjoyed it though. Next time I'd add more garlic and onion.

Sweet Dinner Rolls

Reviewed: Jan. 10, 2010
Very nice rolls! They are light and taste wonderful with honey! I cut mine into pieces, rolled, and baked in a 9x13 pan rather than making crescents. Delicious!

Baked Sweet Potatoes with Raisins and Pecans

This recipe is a gem! Super easy and tastes fantastic! I didn't change a thing - it's perfect as it's written.

Mound Bars

Reviewed: Jan. 1, 2010
These are delicious and very rich. I also just put coconut on top of the crust and then poured the milk over it. You do need to heavily grease your baking pan or these will never come out!

Apple Raisin French Toast Strata

Reviewed: Dec. 31, 2009
I wasn't that impressed with this. It was good, but just not very flavorful. I cut the recipe in half and then still only used 3 eggs. It wasn't soggy or dry - just perfect there. But it was bland.

Cranberry Eggnog Cornbread Scones

Reviewed: Dec. 29, 2009
Delicious scones! I almost added more sugar but am glad I didn't because the eggnog takes care of that. I love how all the flavors blend together. I formed my dough into a fairly thick circle and then cut these into triangles. It made about 9. Just great!

Peanut Butter Chews

Reviewed: Dec. 24, 2009
Oh my - these are spectacular! I used 5 cups of cereal and only about 1/4 cup of butterscotch chips. I spread these out in a greased pan and then drizzled the melted chips on top so we'd have bars. It doesn't get much better than this! I, too, only boiled the syrup/sugar mixture for 30 seconds and these stayed nice and soft. Takes very little time or effort and the flavor is out of this world!

Truck-Stop Buttermilk Pancakes

Reviewed: Dec. 24, 2009
Hmmmm - something is missing in the flavor. Maybe vanilla? I scaled the recipe to 5 and it made 20 pancakes, so it makes a lot. I guess it just wasn't as sweet as I like. They were easy and the consistency was nice but the flavor was off somehow.

Chocolate Pretzels

Reviewed: Dec. 22, 2009
Well it doesn't get much easier than this! My son and I enjoyed putting these together. I used square pretzels and put them in the oven for 2 minutes at 300. They taste great right out of the oven when the chocolate is all soft, but they are even better chilled. I lined my baking sheet with foil for very easy clean-up.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Dec. 22, 2009
This is one of the best salads I have ever made! I used about 2 cups of monteray jack cheese, 2 apples and probably another 1/2 cup of cashews. It was perfect and the dressing is to die for! It actually makes quite a bit of dressing, so you could easily add more lettuce and still have plenty of dressing.

Pumpkin Oatmeal

Reviewed: Dec. 18, 2009
This wasn't sweet enough for me and I couldn't really taste the pumpkin. If I made it again I'd add more sugar and pumpkin.

Flank Steak a la Willyboy

Reviewed: Dec. 14, 2009
This is a great marinade! I use red wine vinegar because I didn't have any red wine on hand and it worked great. It sat for almost exactly 24 hours and the flavors really soaked in. Great!

Pumpkin French Toast

Reviewed: Dec. 12, 2009
This was good, although as others have said, we could not really taste the pumpkin even though I increased it to 1/2 cup. I used 1 tsp pumpkin pie spice in place of the cinnamon/nutmeg combo and added 1 tsp of vanilla. The batter was really thick, so you want to use a hearty bread.

Chicken Breasts with Herb Basting Sauce

Reviewed: Dec. 7, 2009
This wasn't as flavorful as I thought it would be, which was a surprise with all the seasonings in it. I used skinless chicken breasts and that may have contributed. I doubled the sauce and was very glad I did. It wouldn't have covered all the chicken otherwise! Baked covered for 40 minutes and then uncovered the last 5 minutes.

Bachelor's Creamy Pumpkin Soup

Reviewed: Dec. 7, 2009
My husband thought this was amazing and called it pumpkin pie soup! I did like it as well, just not as much as him! I added 2 Tbsp brown sugar, as well as 1/2 tsp each of cumin, sage, and cinnamon. Also used chicken broth instead of water. I do recommend using heavy cream for the most creamy soup. Very nice on a cold winter evening!
