Chunky and Creamy Potato Salad

Nice potato salad and I liked the ranch rather than mayo. I didn't use broccoli and I was out of bacon, although I'm sure the bacon would have made it even better! I cut the recipe in half and then only used 3/4 tsp of dill and that was plenty. Also didn't use any salt. We liked it a lot.

Honey Crunch Cookies

A delightful and delicious cookie! They remind me of "Skywalker Crunchies" that my brother used to make all the time when we were growing up. The honey provides such a different taste (in a good way) and mixes beautifully with the coconut and butterscotch chips. I used 3 cups of rice crispies and that was perfect. Yum!

Seven Layer Taco Dip

This was a HUGE hit at the party I took it to. Small changes - I mixed the taco seasoning with the cream cheese/sour cream layer and I left out the bell pepper. I used about 6 leaves of lettuce, and I put some on top of the sour cream layer and then some on with the other veggies. Everyone raved!

Cinnamon Snack Mix

Oh so tasty! This was a hit at Bunco and very easy to make. I used cinnamon graham cracker sticks broken up rather than the bears (cheaper!).

Main Dish Macaroni Salad

This is very good. I cut the recipe in half for my family of 3. I used elbow macaroni and added some red pepper, which gave it a nice crunch. Also added a little pepper and used dry parsley rather than fresh. Very light and simple to make.

Easter Surprise Cupcakes

This is a pretty good cupcake. My eggs sank to the bottom and to be honest, I don't think you need them. But then there'd be no surprise! I frosted mine and put jelly beans on top and they were quite delightful.

Butter Cream Frosting II

Wow, a keeper! Best frosting recipe I've found on this site. I cut it in half and it frosted 24 cupcakes with just a little left over. I did beat it for about 5 minutes and it was plenty thick and spread very nicely.

Baked Egg Casserole

Very good and a great way to use up extra Easter eggs! I realized I didn't have evaporated milk while my butter was melting, so I used 2/3 cup dry milk power mixed with 3/4 cups of water as a substitute. It worked well, although I'm sure some of the sweetness the evap milk would have added was missing. Even so, very nice and we'll make it again for sure!

Beer-Baked Irish Beef

This was good, although I found the sweet taste from the allspice to be a bit odd. I added potatoes and celery and also a can of beef broth so it was more like a stew. Otherwise there's hardly any liquid. A bit of work to get it going, but I'd say it's worth it. I cooked on low for about 8 hours.

Four Cheese Macaroni

Oh my - this is rich and creamy! I made mostly as written except I used mozarella cheese instead of Muenster and shells instead of elbow mac. I doubled the shredded cheeses as well, and I only used 1 egg. Baked for 25 minutes and it was perfect! Very cheesy!

Zucchini Pasta II

This is certainly light, but not nearly enough sauce for us. I thickened it a bit with 1 tbsp of flour but it just wasn't enough and it was also quite bland. Doubled the zucchini and used bow tie pasta.

Grandma's Easy Turkey Taco Salad

This is quick and easy and tastes good too. We just added chips, tomato and lettuce as we prepared each plate rather than mixing it all together. I used Thousand Island dressing on mine and loved it. My husband and son used Ranch. We topped with cheese.

Oven Barbecued Beef Brisket II

Delicious and simple! I seasoned my brisket with garlic salt, pepper and paprika. I only has about 8 oz of chili sauce so I filled in the rest with bbq sauce. Worked beautifully! It cooked on low for about 8 hours and was tender and perfect.

BBQ Chili Pasta

Yummy! I used penne pasta because that's what I had and I added 1/2 tsp of cumin. Used a nice, tangy bbq sauce and it was really delicious. We topped with monterey jack cheese.

Raspberry Fudge Brownies

The brownie and filling would be 5 stars (so awesome!), but I didn't really like the frosting. The frosting tasted best really cold, but then the brownie was hard from being in the fridge and I didn't like that as much. So, it's a solid 4 stars!
