Good Old Fashioned Pancakes

These pancakes were amazing! They were so light and fluffy and delicious. After reading some reviews, I reduced the salt to 1/4 tsp. They were not salty at all so I'll keep making that change. I added vanilla and fresh blueberries.

Sweetheart Cookies

This was a very delicious and easy to make cookie. I only had one egg on hand so was happy to find this recipe. The only change I'll make next time is to make a bigger indention and use more jam. Strawberry and black raspberry were superb.

Lentil Soup

I was a little taken back by the vinegar when I read the ingredients but trust me...make sure you put it in. I used balsamic vinegar and I can't believe what a great flavor it added. I followed the recipe exactly otherwise but added some chicken bullion for a little more flavor. I can't wait to try it tomorrow after it's had a chance to sit overnight. Great, hearty soup.

I made this in half batches to reduce mess and keep pieces more evenly coted with the sugar. I added 2 T butter as well to make the chocolate mixture a little smoother.

Gingerbread Biscotti

This turned out so good! I did double most of the spices and added a 1/4 teaspoon of black pepper. I can't believe how much it made the spices "pop". I also added 1/4 teaspoon salt and 1/2 teaspoon baking soda. I got tons of compliments on it when I took it to work. The taste got better the second day. I did dip some of them in white chocolate which tamed the spices but I love the kick. If you like a sweet treat, I would definitely leave the spices alone and follow the recipe as written.

Banana Banana Bread

This was true bananna bread! I usually add chocolate chips or nuts but I just left this plain and it was delicious. I was about a banana short but it worked out fine. The bread was super moist and full of flavor. I think I may lose all of the extras and just go for the pure flavor of banana in the future.

Blueberry Zucchini Bread

Chip Chicken Lollipops

My kids liked these but I couldn't seem to get them crispy. I cooked them on a rack over a cookie sheet so they would brown evenly but it didn't quite work.

Double-Cheese Eggs Benedict

Yummy! This was a delicious egg dish and my DH loved it for his b-day. It was my first attempt at poaching eggs but they came out great. I almost didn't add the mustard because I hate it but it definitely added just a bit of tang that was necessary. I also did not have milk so I used a 12 oz can of evaporated milk and it made it very rich and creamy. I'm going to try it again with FF milk to see the difference.

Sloppy Joes II

This was the best sloppy joe I have ever had. I had the ingredients on hand and it was quick and easy. I did use spicy mustard for a little more kick but the sauce to meat ratio was perfect. My kids (2 & 4) are cleaning up thier plates. Thanks for a winning recipe!

Brown Sugar Meatloaf

Pork Tamale Pie

This was absolutely delicious! I had leftover pork roast so I didn't have the 2 cups of juice to simmer the pork in so I just used chicken broth. It turned out wonderfully but I would recommend cutting back on the cayenne pepper if you don't like things too spicy. I used diced tomatoes with jalepeno peppers since my family likes things really spicy.

Sour Cream Chicken Enchiladas

I modified this recipie quite a bit and it still turned out great! I used a medium salsa along with the green chile salsa and put it in a oblong glass dish. I layered the enchiladas and poured the sauch over the top. Still had quite a kick and was very good.

Egg and Sausage Casserole

I baked it in a stone deep dish pie plate and the egg mixture must have leaked under the crust. The crust floated up into the center of the dish. It looked a little funky but the taste was great. I'll try the right pan next time.

Chocolate Eclair Dessert

This was really good! I still prefer the original eclair but this was a great dessert. Microwaving the frosting really helps the consistency and makes it easier to spread. It was great the second day.

Cherry Crunch

This is a great dessert recipie when you really don't feel like baking. It only takes a few minutes to prepare then just pop it in the oven while you clean the house. I know it would be great over vanilla ice cream but I like it just by itself. I used a "lite" version of the cherry pie filling and it turned out just great.

White Chocolate Cake

This was a very good cake. I'm not a fan of white chocolate but really liked the flavor. The frosting was to die for. I could have eaten it with a spoon. Served it at a dinner party with the raspberry sauce recipie I found here and it got rave reviews.

The Best Lemon Bars

These bars are amazing! If you like lemon...you'll love this recipie. I had small lemons so I used the juice from 3 and it tasted perfect...not so tart you make a funny face. I tried them warm out of the oven and they melted in my mouth. This will be a great potluck or cookie exchange recipie to have!! Thanks for sharing!

Sam's Famous Carrot Cake

This was the first time I made a carrot cake and it turned out awesome! I thought the raisins and pineapple might have made it too sweet but it was just perfect. I served it to my bible study group and took the rest to work the next day. Everyone raved about how great it was. I'll be making this one often.

Raspberry Sauce

My second batch turned out perfectly! Had a few problems with the first one...I didn't get much juice from the thawed raspberries and I was afraid to add too much water so it ended up more like a raspberry spread. I'm going to use it for something though. The actual sauce was amazing! Make sure to boil it for at least a minute to make sure the cornstarch dissolves. YUMMY on cheesecake!
