Good Old Fashioned Pancakes

Tried making this recipe as written. The first pancake was too thick and took too long to cook throughout. So, I diluted with more milk. After tasting the pancakes, all I tasted was salt. Will not make these again. My son did not finish his pancake. I`ve tried better pancake recipes from this site. Wish I had saved the last one! But this was definitely not one for the recipes box. Update: I decided to give this another try. I probably used sea salt last time, because I didn't notice the salt this time around. It was still too thick (like cookie batter). Don't know what I'm doing wrong. So again, I added more milk to make the batter less doughy. I tilted the pan to spread the still thick batter, but it cooked evenly this time and tasted incredibly good. I added some vanilla extract, almond essence, cinnamon and nutmeg. Delicious.

Spinach Tomato Tortellini

Delicious and easy! I've added this recipe to my favourites. I tweaked here and there because I used two packages of tortellini, but for the most part stayed true to the recipe. I love spinach, so I included the bunch. I sautéed a whole clove of garlic with half a large onion. Used half diced, half crushed tomato sauce. Instead of full cream, I used light cream, a little more basil, salt and pepper to taste. Definitely want to try again with sliced veggie Italian sausages and sautéed mushrooms. Terrific recipe. Old Fashioned Mac and Cheese

This Mac & cheese was very good. I would definitely make this again. I did make a couple changes. I used 1/3 package of sharp cheddar and 1/3 package of taco mixed cheeses. I also roughly crumbled some whole wheat crackers on top and added some pats of butter over the crackers. I might try sautéing the onions next time, but it was tasty as is.

Healthier Southern Peach Cobbler

I mixed a variety of fruits- 5 peaches needed using up, supplemented with frozen mixed fruits. It only needed 15-20 minutes to bake. I had put the timer on for 25 minutes, but at 20 minutes it was slightly burnt on the tips. Really easy recipe though. Served it up with the low fat Cool Whip.

Todd's Famous Blueberry Pancakes

Delish! My 4 year old helped. Very fast and easy recipe. Everybody loved them. They were fluffy and light. I followed one reviewer's advice and added the blueberries on the griddle. My son had fun with this part. I'll probably also add the blueberries to the batter next time. Also added a pinch of nutmeg, cinnamon and vanilla extract. We topped it off with some sliced bananas and homemade applesauce along with the syrup. Definitely a keeper. Thanks Todd!

Mashed Potato 'n' Parsnip

It was tasty. I added half & half for a creamier texture, but I think I'll try warming the milk and butter next time as mentioned in another review. I also added white pepper. Didn't have brown sugar and will probably leave it out next time too. Loved the carrot and parsnip, great taste and nice change from the traditional versions.
