Gorgonzola Butter
This is great, I use heavy cream and gorgonzola in a food processor for the same result. For some reason, there is something comforting about using a good cream and making my own butter from it. It's all yummy though.

Empanadas (Beef Turnovers)
Wow, just like mom's! These really are fabulous. If made true to the recipe, they are wonderful. My mother always added a couple of small dashes of cinnamon, yes, cinnamon, to the picadillo (which I, of course, had to do), and it makes such a lovely addition. Either way, though I do recommend trying a dash or two of cinnamon, these are a winner!!

Mexican Bean Salad
Ok, I just made the salad and holy crapoly, it was great! I always look on here and think, "Oh, Lord, another review where the person has altered the entire recipe so that it doesn't even resemble how it looked originally." Unfortunately, many times I do alter the recipes based on what everyone says (often times, this is a good idea). This time however, I only did a couple of things differently from the original: Added a sprinkle of oregano, toasted the cumin seeds before grinding and since I didn't have kidney and cannellini beans, I added black beans, garbanzos, and corn instead. Other than that, if I had the proper ingrediants to begin with, I wouldn't have changed much at all. WOW, so fresh and such a winner!
