Southern Biscuits with Mayonnaise

These biscuits turned out well -- though for my oven, 20 minutes was much too long. They were ready in about 13 minutes. Also I think they needed a little salt. But the texture was great!

Garlic Kale

This was delicious! I took the suggestion of steaming the kale in a pyrex bowl/lid in the microwave for 3 minutes before sauteeing. I also chose to use bacon grease rather than olive oil, salt & pepper to taste, and I cooked it in a cast iron skillet. It was awesome and not bitter at all!

Mackerel Dip

I added the juice of one fresh lemon, some cilantro (about 3 tbsp) and used Louisiana Hot sauce in place of the tomato-based hotsauce. I also added about 1 tbsp catsup & 4 stalks of celery diced. This made a great sandwich -- paired with soft wheat bread and shredded lettuce.

Texas Chocolate Frosting

This frosting is delicious! I made a double-layer chocolate cake and then used 1.5 times the ingredients for the frosting, and I had quite a bit of frosting left over! MMMmmm... and it goes great on graham crackers too! (a great treat for your kid's lunch box in case you ahve never tried it - chocolate frosting/graham cracker sandwiches - just like mom used to make!). Five stars! (FYI: I used evaported milk so it wouldn't spoil if left out on the counter, and the frosting tastes great!)

Shortbread Supreme

I make this shortbread every year at Christmas time... and it 'ages' well --it tastes even more rich and delicious a couple of days later! I also use it to make a fabulously rich crust for my cobbler and pecan pies!

Spicy Lamb Patties

I made these to grill on a charcoal grill and they were terrific! The only change I made was to add about 1 tbsp. of paprika in order to give the juice a more 'red' color as I was trying to get something close to what we eat when we go to our favorite Turkish restaurant. The flavor was excellent! Next time I think I will spice them more liberally since we are spicy food people, but really, the (amount of) spices called for in the recipe worked very well. We will definintely make these again!
