I switched the cooking up on this. I threw all of the ingredients into a one gallon zip lock bag (I used boneless pork chops, left out the golden raisins and cilantro, I didn't have them on hand, and added twice as much olive oil). I let it marinate for a few hours and threw it in the freezer to make later. I took this out the night before I made it and left it in the fridge, in the morning I threw it in the crock pot on low and just let it cook. The meat came out dry so I will use a tenderloin in the future and will also consider searing it before adding it to the pot. But the smell was amazing!! I wish I had doubled the recipe. This was perfect for the busy person and I am sure that it is even better when it is made the way it is written. Over some rice and green beans, perfect dinner or lunch.

Chipotle Burgers with Avocado Salsa

I had to throw together a last minute meal for a friend coming over and this was PERFECT! I used my own burger recipe (onions, garlic, worcestershire) and added the cilantro. I didn't use jalapeno peppers in the salsa, but next time I will add one or both.

Watercress Soup II

I purchased watercress because I have never used it before and wanted to try something new. I added dried basil, garlic powder and sriracha after stirring in the watercress to add some flavor. This was very easy and I will try it again.

Blueberry Cream Muffins

This was a great recipe!! My partner and I wanted something a little sweet and this was perfect. I made it exactly as it said, but cut the ingredients down to only make 6 and it was perfect!

Annie's Fruit Salsa and Cinnamon Chips

Many of my friends said this was their favorite appetizer at our party. I used 2 tablespoons of lemon juice instead of the fruit preserve and I'm glad I did, I think it would have been too sweet for my friends.

Apple Julep

I was a bit unsure of this recipe; however, I wanted a non-alcoholic beverage at my party. I added more crussed mint than called for as well as about 3/4 cup of raspberries. It was great! I will definitely make it again!

Old-Fashioned Roasted Pecans

This was a HUGE hit! I took some liberties and added bacon though. I cooked thick cut bacon on the stove, chopped it up and tossed it with the pecans once they were done. I used an equal amount of bacon and pecans, but I'm sure it is easily adjusted. This will be served at all of my future parties!

Southwestern Macaroni Salad

This was quick and easy to make. The chili powder was a bit much so the second time I used a jalapeno pepper instead of adding any chili powder. The next time I make this I will add about 1 tsp of chili powder to the dressing and will make sure to keep the jalapeno in there as well.

Oven-Roasted Asparagus

This was great!! I used two garlic cloves as well as fresh lemon juice and it was a huge hit! When I baked it I used the stove top and set the temp at medium and let it cook for about 10 minutes, covered. It still turned out well, but I did add some more freshly grated parmesan at the end. When I make it again I will use the oven.

Spinach and Strawberry Salad

Best summer salad recipe!! I use red wine vinegar instead of white though. I also use a teaspoon of dry mustard and leave out the sesame seeds.

Crescent Bacon-Cheddar Pinwheels

This is always a huge hit! I use 2x the green onions and I buy bacon from a local butcher and make my own bacon bits. I have also used dijon mustard and sage sausage as a filling as well so I'm not always serving the same thing.

Fried Mac and Cheese Balls

I went to my local cheese shop and asked them for their advice. They suggested three different cheeses, which were wonderful. A gruyère, 'soft smelly' cheese, and a third I can't remember. I also used panko break crumbs instead of seasoned break crumbs.

Salmon Puffs

I used the seamless pillsbury roll, which worked very well. Some other reviews mentioned the concern around the cheese. I used goat cheese and it was wonderful, but I actually don't believe you could go wrong with any variation. This is a wonderful recipe!! The next time I will use goat cheese again as well as add green onion or spinach.
