Brown Rice Salad

Excellent salad! I left out the honey because I prefer the tanginess of the dressing without it. The only change I'll make next time would be to double the spices for a little more flavor.

Baked Brie in Puff Pastry

Fantastic! Instead of almonds, I used a mixture of sundried tomato spread, a fresh minced clove of garlic and a little bit of minced fresh basil. I served it as an appetizer at a dinner party last weekend and it was gone in about 15 minutes.

Simple Spinach Lasagna

Fantastic recipe! I've made many lasagnas over the years in search of a great one and this one is finally it. A few small changes seemed to give it a boost - I used fresh spinach, I substituted half the cottage cheese with low fat ricotta, I also substituted the water with 1/2 cup red wine and 1/2 cup chicken broth, and finally I divided the mozzarella and put half in the cheese mixture and half on top of the lasagna.

Vegan Black Bean Soup

Great recipe! I substitute chicken broth for the vegetable broth and cut the amount in half for a more stew-like consistency. I also have experimented with substituting 1 Tbsp. of the chile powder with chipotle chile powder or ancho chile powder - both are nice variations on the original.

Hot or Cold Vegetable Frittata

This got rave reviews from our guests, most went back for a second helping! I cut back on the veggies a little bit and added a pound of pork sausage cooked with a teaspoon of rubbed sage; cooked the veggies in the sausage drippings.

Classic Spanish Sangria

I agree with some of the reviewers about using spiced rum (Captain Morgan's) - it adds a unique flavor. I have served this at two parties and both times it was gone before all of the guests had even arrived.

Angel's Pasta

This was wonderfully quick and easy to make - the only changes I made were that I shredded the zucchini, used canned petite diced tomatoes and added a tablespoon of fresh grated parmesan along with the basil. Will definitely make again!

White Chili with Ground Turkey

One of our all time favorites! My only suggestions are to leave out the cinnamon, add frozen corn, and since we're big fans of everything spicy, I swap the monterey jack cheese for habanero cheddar. Top it off with a dollop of low-fat sour cream - spicy & delicious!

Chile Pasta Salad

Very tasty! I doubled the amount of dijon & pasta and used 3 large plum tomatoes. There might be something still missing from this recipe, but it won't stop me from making this again.
