Baked Oatmeal II

This was delicious. I made one version with nutella instead of cranberries and another with nectarines. This one is a keeper.

Lentil Soup

This soup was absolutely delicious. I have to admit that I made a few slight changes. I threw in some chopped red bell pepper that I had on hand and a chopped chorizo link. I also used 6 cups of chicken broth in place of some of the water. I did not have celery on hand, so I used celery seeds. I also threw in two small potatoes that I had peeled and cubed. I did not add spinach as I had none on hand. I ate the soup over some cornbread--the golden sweet cornbread recipe from this site--with a dollop of sour cream. This was sooo tasty and filling. I will be making this often this fall and winter.

Pat's Dumplings

This was a great recipe. I used more water, about 3/4 of a cup in all and used butter and olive oil. I also added seasonings like others suggested: onion powder, garlic power, pepper and oregano. They were delicious, but ended up tasting a bit like olive oil. That was ok, just be mindful of that if you are going to substitute olive oil for part or all of the shortening.

Navy Bean Soup I

This soup was very good. i cooked it in a slow cooker. I admittedly made some changes. I did not have celery. I used navy beans, chopped tomatoes, carrots, corn, red and yellow peppers, basil, salt and pepper and 4 bouillon cubes with 8 cups of water. I did not use ham and I forgot the garlic, but the soup was still tasty.

Alfredo Sauce

This recipe was easy and quick. I made a few changes because I did not have all of the indredients. I used 1% milk rather than cream and 1 cup of cheddar cheese along with about 1/3 cup of parmesean cheese. I also added a little salt and added an extra clove of garlic.

Shortbread Cookies II

These were very easy to make and delicious. I recommend combining the ingredients by hand. I tried it with a mixer and then with a spatulta and only got loose crumbs. The dough came together when I mixed by hand. I halved the recipe and pressed the dough into a spring form pan. I took the advice of other reviewers and baked the shortbreat at 300 degrees for half an hour. Be sure to let them cool before you cut into them so that they don't crumble. I also added a teaspoon of vanilla for flavor. I will make these again.

Simple White Cake

Very good recipe. I made this while cooking up the last of my food before a move, so I didn't have all of the ingredients and had to substiute some things. I used 1 3/4 cup of powdered sugar instead of plain sugar, a little over a cup of evaporated milk instead of the milk, and cake flour rather than all purpose flour. I also had no vanilla so I used one package of instant vanilla pudding. I used the recipe to make cupcakes which turned out lovely and delicious! I will make this again but with the pudding mix added in.

Roasted Garlic Cauliflower

Very delicious. When I made it I added a bit more garlic and I sprinkled about a teaspoon of Spike all purpose seasoning. Otherwise, I followed the directions exactly! I will be making this regularly.

Spinach Quiche

Very good basic quiche recipe. I have used this often as a base to make quiche. I often use gruyere and gouda cheeses and some goat cheese (about 6 ounces) and I leave out the cottage cheese. I also saute half a large yellow onion with garlic and then I cook that with the spinach (i've also used fresh baby spinach). Sometimes I put in roasted red peppers, ham, smoked salmon or other things for flavor. Try using spike seasoning as well.

Easy Pizza Sauce III

Quick and Easy Pizza Crust

This dough is quick, easy and delicious. I followed the recipe exactly except for using all purpose flour and mixing the dough using my hands rather than beating it. With no extra rise time, it was easy to work and made a nice crust for a cookie sheet sized pizza. I have made this twice. I used loose active dry yeast--2.5 teaspoons equals one package. I will be making this often.

Good Old Fashioned Pancakes

The batter for these seemed a little thick, but the pancakes came out light and fluffy. I added a bit of vanilla to the batter for flavor. I would also cut down a bit on the salt--they came out sort of salty. Will be making these often.

Roasted Brussels Sprouts

These are great! I found the same recipe on the foodnetwork site and tried that one. It was great! I was out of olive oil, so I used butter the first time, and they were great! I made it a second time with olive oil and a little it of butter and they were delicious! This is definitely something I'll be making very often. I cut mine in half before I mix them with the seasonings and oil.

Cheesecake Brownies

These were yummy. I didn't use brownie mix but used the Best Brownies recipe off of this site. They turned out yummy. They took about 40 minutes to bake, but they were delicious. I used low fat cream cheese to make these. Very delicious.

Mrs. Sigg's Snickerdoodles

I made these for a study session and they got rave reviews. I found they were best eaten warm the day of. The next day they were very hard. I've never made my own snickerdoodles before this recipe, so I don't know if they are meant to be hard. Other than that, they were great.

Golden Sweet Cornbread

This always turns out sweet and delicious! It is my standard cornbread recipe now. It is awesome when paired with turkey chili! A nice addition to this recipe is whole corn. I took one ear of sweet corn and cut off the kernels and added it to the finished batter. I also cooked it up in a cast iron skillet. It was divine. All my friends love this cornbread when I make it.

Mom's Ginger Snaps

These ginger snaps turned out wonderful and delicious! I doubled the spices per other suggestions and added 1tsp of almond extract to the molasses mixture. I only had about 1/4tsp of ground cloves, so I substituted nutmeg for the rest. The second time I made these, I added 1/2 cup of quick oats and about 2-3 tablespoons of flax seed. I also substituted one cup of whole wheat flour the white flour. These were yummy and fast! I'll be adding this to my recipe rotation.

Flourless Peanut Butter Cookies

These cookies always turn out lovely and delicious. They are great when you have a craving for peanut butter cookies but don't have flour or the time to do traditional cookies. I sometimes add a few tablespoons of cocoa powder and a teaspoon of vanilla extract. Very yummy! I make these way too often. I use regular creamy peanut butter. Now that I am starting South Beach, I'll experiment with Splenda and report back.

French Toast I

This was a tasty basic recipe. I made mine using pretty fresh bread. I did not have nutmeg, so I used ground cardamom. I sprinkled extra cinnamon on it as it cooked. I thought it was pretty tasty. Next time I'll used stale bread. I also cooked mine using margarine. I think the buttery goodness definitely helped the flavor.
