Well, I wish I could say that my first attempt of modifying a recipe was a complete success..but not so much. Although, it was my own mistake for not getting the correct cut of beef which hindered it from being successful.

3-Ingredient Pulled Pork 
(adapted from tablespoon.com

1 (2lb) pork tenderloin (shoulder or butt can also be used)
1 (12oz) can of root beer
1 (18oz) bottle of GF barbecue sauce
(bread of your choice)

  • Place tenderloin in slow cooker and pour can of root beer over meat.  Cover and cook on low for 6hrs (or until pork shreds easily with a fork).
  • After pork has cooked, drain and discard root beer.  Shred the pork and place back in slow cooker. Pour the BBQ sauce over pork and stir to combine.  Serve immediately or keep warm in slow cooker until read y to serve.  
  • Serve with your choice of favorite gluten free bread.
Lesson Learned: Do not rush through grocery store and pick up pot roast instead of pork butt which a) didn't shred well and b) was more fatty.

I also had used diet root beer since it was all I had on hand.  Until I have chance to make again, won't know if that makes a difference.  I have heard that Dr. Pepper also works well.

My favorite thing about it was how easy it was! And in spite of my goof with meat selection, it was still pretty tasty.
