Sweet and Savory Kale

My husband and daughter (and me) actually had seconds of this dish. I made it almost exactly as written - only change I made was to add only about a cup of chicken broth. I'm actually glad of that because the only reason I didn't give the recipe 5 stars was that it was still a little soupy. But the taste was great and it made kale (a veggie I consider NOT likeable) actually good!

Gravy Baked Pork Chops

I absolutely loved this recipe. Like most people though, I tweaked it quite a bit, but I never would have thought of it without seeing this recipe first. The chops and "gravy" came out so tasty you'd think you were eating in a fine restaurant. The chops were tender and could be cut with a fork! I used center cut pork chops and browned them in my enamel cast iron dutch oven with a little peanut oil. once they were almost done browning, I threw in a chopped up scallion and sauteed that for a minute. Salted and peppered well at this point. De-glazed the pan with sherry wine, threw on a can of condensed potato soup, and into the oven at 250 for 1 hr 45 min. Took it out of oven and removed the chops. Added about 4oz chicken broth to the pan to make the gravy less thick. Next time I'll add some sliced mushrooms. I now also want to try this same technique with chicken, using marsala with cream of mushroom soup. I think it will make an awesome and easy chicken marsala.

Very Chocolate Cookies

These are the best cookies I've ever made. I did everything almost exactly as the recipe called for, except I added 2 teaspoons of instant coffee powder along with the dry ingredients. I made them smaller than the recipe called for - made 3 doz, so they were smaller than the original recipe. Baked them for exactly 10 minutes, and they came out amazing. A delicate crisp on the outside, and a soft chewy inside. They remind me of the double chocolate cookies at Panera's.

Barley, Lentil and Mushroom Soup

This was very good. My husband ate it and complimented it, even though he doesn't like lentils or mushrooms! I would have like more veggies in there, but I guess you can just add them to the recipe.

Slow Cooker Chicken Stroganoff

Oh my gosh, I just made this recipe today and it was amazing! My entire family liked it, which almost never happens! They want me to make it all the time. I cooked up some white rice and green peas (just throw frozen peas into rice 10 minutes into cooking the rice), and put the chicken and sauce over the rice and peas. It was truly delicious. We used the low fat/low salt soup, and the lower fat cream cheese. Really a fairly healthy recipe except for all the margarine.

Beefy Baked Ravioli

Made this last night and my entire family loved it and scoffed it down. I even overheard my teen aged daughter tell her boyfriend about it today! I used extra raviolis and did three layers, and I only used mozzarella since my husband won't eat other kinds of cheese.
