Barley Risotto Primavera

Reviewed: Dec. 30, 2012
Such a delicious recipe. I substituted olive oil for vegetable oil and vegetable broth for chicken broth, and it turned out extremely flavorful.

Thai Chicken Curry in Coconut Milk

Reviewed: Dec. 22, 2013
This is a great recipe. I added garlic and a lot more curry paste as the other reviewers suggested. I can't eat gluten or soy so left fish sauce out and instead just added salt (I'm sure it would be even better with the sauce). It turned out amazing and is probably the closest I will ever get to restaurant-quality Thai food.

Quinoa Black Bean Burgers

Reviewed: Jul. 10, 2013
These are so insanely good. I had some trouble with the proportions the first time I made them because I got lazy about measuring, so they kind of fell apart in the frying process. The second time went much better when I followed the recipe exactly. I added oats instead of bread crumbs because I can't do gluten and added an extra egg just to be safe. These have now become a weeknight staple, and now we just eat them without any kind of bread and put some veggies on top. They are so easy too!

Balsamic Chicken and Fresh Mozzarella

Reviewed: Jul. 10, 2013
What a great, gourmet-tasting recipe! I added some garlic and italian seasoning to the marinade and also used some fancy fig flavored balsamic instead of regular. I threw the chicken in a dish with the marinade and baked it in the oven at 350 for 20 minutes as another reviewer suggested. It came out so great! The marinade caramelized nicely, and the tomato, mozzarella and basil really complimented all of the flavors.

Cilantro, Avocado, Tomato, and Feta Salad

Reviewed: Dec. 30, 2012
This is one of my favorite recipes. It is so refreshing in the summer. I have also taken it to multiple dinner parties and it always gets rave reviews. Just make sure not to mix it too much so it doesn't get too mushy.

Mama's Italian Wedding Soup

Reviewed: Dec. 30, 2012
I loved this soup. Very flavorful and the meatballs turned out great (I've always had trouble with them in the past). Thanks for the great recipe!

Honey Cornbread

Reviewed: Jul. 10, 2013
Not that I have much experience with cornbread, but I really don't know how it could be better than this. I substituted milk for the cream and added 1/2 cup honey and omitted the sugar because I don't like overly sweet stuff and the honey flavor is better anyway. The texture and flavor were both great--perfectly moist and delicious.

Turkey and Quinoa Meatloaf

Reviewed: Jun. 1, 2013
This is an excellent recipe! I can't eat gluten, so I can't eat most meatloaf because of the breadcrumbs, but I actually like it much better with the quinoa. It stays much moister than most meatloaf. Only change is to add 2 eggs, as other reviewers suggested.

Chicken and Lentils

Reviewed: Jun. 1, 2013
This is a great recipe! I've made it twice now, and it is always so easy and delicious. The only difference is that I use boneless, skinless chicken breast instead of bone-in because it's easier.

Quinoa Chili

Reviewed: Dec. 30, 2012
This has become one of my staples. So hearty and healthy. It is great in summer or winter. It's great with sour cream and a little cheese on top. I follow the recipe exactly and it turns out great every time. Thanks for the great recipe!

Dijon-Dill Brussels Sprouts

Reviewed: Dec. 30, 2012
By far the best brussels sprouts ever. I actually crave this recipe. I always add a little more dijon, lemon juice and dill than the recipe calls for because I like things a little tangier and have never put the water chestnuts in. It is so amazingly good. Thanks!

Raw Cucumber Soup (Gluten and Dairy-Free)

Reviewed: Dec. 30, 2012
Excellent soup! I was a little skeptical since cucumbers are fairly flavorless, but this was a hit with me, my husband and my parents. It has a great subtle flavor and is very refreshing.

Creamy Beet With Dill Soup

Reviewed: Dec. 30, 2012
I think this is one of my favorite recipes of all time. The caraway seeds are the key I think. I left out the sugar since beets are so sweet already and used 2% milk, and it was perfect. My parents also raved about it....more than once after I gave them some.

Fresh Beet Salad

Reviewed: Dec. 30, 2012
Really great recipe. I made it without the bacon to make it healthier and because I'm not a huge bacon fan, and it was still incredibly flavorful. Great combination of flavors and makes a great side.

Mendocino Chicken Salad

Reviewed: Dec. 30, 2012
This is a really great recipe. I buy chicken breasts and cook them myself instead of buying the pre-cooked stuff and cut down on the mayonnaise since I don't like a lot of mayo. I also add a bit of dijon mustard to give it some extra flavor. The grapes and almonds really make this awesome though.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Reviewed: Jun. 1, 2013
I love this recipe. The flavor of the vinaigrette balances the kale perfectly. It is also easy to modify the recipe and just use whatever veggies I have around. It is always delicious no matter what I use. Super healthy and surprisingly filling as well. Thanks!

Honey Soy Tilapia

Reviewed: Jul. 10, 2013
This was a really great recipe. Neither my husband or I are crazy about fish but we eat it for the health benefits. We always have to find sauces/marinades that mask the fishiness. This marinade did the trick. I used some fancy fig flavored balsamic, and the combination of flavors was really really good.

Roasted Kohlrabi

Reviewed: Dec. 30, 2012
This was so delicious. I love kohlrabi raw and didn't think I could love it more cooked, but I did. It gets a little bit sweet when you bake it and really tender. Great recipe!

Roasted Yam and Kale Salad

Reviewed: Dec. 30, 2012
Delicious salad. Great way to combine two super foods and the sweetness of the yams really provides nice balance to the kale flavor. Everyone that tried it loved it. Thanks for the great recipe!

Excellent recipe. I doubled the mushrooms (dumped the whole carton in), and it turned out great. Made a great "gourmet" dinner with very little effor.
