Thai Chicken Curry in Coconut Milk

This is a great recipe. I added garlic and a lot more curry paste as the other reviewers suggested. I can't eat gluten or soy so left fish sauce out and instead just added salt (I'm sure it would be even better with the sauce). It turned out amazing and is probably the closest I will ever get to restaurant-quality Thai food.

Savory Swiss Chard with Portobellos

Honey Cornbread

Not that I have much experience with cornbread, but I really don't know how it could be better than this. I substituted milk for the cream and added 1/2 cup honey and omitted the sugar because I don't like overly sweet stuff and the honey flavor is better anyway. The texture and flavor were both great--perfectly moist and delicious.

Grilled Zucchini Pizza with Goat Cheese

Oh my god these are amazing! I can't eat gluten anymore and never thought I would find a substitute that was equally satisfying. The only thing I did differently is slice the zucchini into long planks and bake them at 400 for about 10 minutes instead of grilling (I don't really understand how they wouldn't fall apart on the grill since the ingredients were all precariously balanced on the raw zucchini). Also used feta because that's what I had. Could not be more thrilled to find this recipe!

Chicken, Mushroom, and Polenta Lasagna

This is an excellent twist on lasagna. The flavors are so much more exciting. The pesto is a great addition, and I was afraid the polenta would get too mushy, but I ended up actually liking it better than noodle texture. I used a spaghetti sauce in a jar instead of making my own to save time and used regular mushrooms and onions. I also threw in some carrots, zucchini and red pepper that I needed to use up. My only complaint is that frying the polenta is both time consuming and painful (oil gets very splashy). Not really sure how to fix that, but might try baking next time...

Quinoa Black Bean Burgers

These are so insanely good. I had some trouble with the proportions the first time I made them because I got lazy about measuring, so they kind of fell apart in the frying process. The second time went much better when I followed the recipe exactly. I added oats instead of bread crumbs because I can't do gluten and added an extra egg just to be safe. These have now become a weeknight staple, and now we just eat them without any kind of bread and put some veggies on top. They are so easy too!

Hearty Vegetable Lasagna

This recipe is really delicious and flexible. I usually add a lot more veggies than it calls for--red pepper, zucchini, carrots. It always comes out great and tasting exactly like lasagna should taste.

Honey Soy Tilapia

This was a really great recipe. Neither my husband or I are crazy about fish but we eat it for the health benefits. We always have to find sauces/marinades that mask the fishiness. This marinade did the trick. I used some fancy fig flavored balsamic, and the combination of flavors was really really good.

Balsamic Chicken and Fresh Mozzarella

What a great, gourmet-tasting recipe! I added some garlic and italian seasoning to the marinade and also used some fancy fig flavored balsamic instead of regular. I threw the chicken in a dish with the marinade and baked it in the oven at 350 for 20 minutes as another reviewer suggested. It came out so great! The marinade caramelized nicely, and the tomato, mozzarella and basil really complimented all of the flavors.

Black-Eyed Pea Gumbo

This was an excellent recipe with a few modifications. I used dried beans instead of canned, tripled the garlic and added salt, chili powder, cholula, cumin and turmeric. I also threw in some chorizo, though it would have been just as good without it. We ate it with both cornbread and fried plantain, and it was delicious.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

I love this recipe. The flavor of the vinaigrette balances the kale perfectly. It is also easy to modify the recipe and just use whatever veggies I have around. It is always delicious no matter what I use. Super healthy and surprisingly filling as well. Thanks!

Turkey and Quinoa Meatloaf

This is an excellent recipe! I can't eat gluten, so I can't eat most meatloaf because of the breadcrumbs, but I actually like it much better with the quinoa. It stays much moister than most meatloaf. Only change is to add 2 eggs, as other reviewers suggested.

Zucchini Herb Casserole

This was a very good recipe. Like the other reviewers, I added red bell pepper, olive oil instead of vegetable, onion instead of green onion and upped the garlic and spices. I wished I would have put less cheese in it as it turned out a little greasy, and think I would try mozzarella instead of cheddar next time. Overall, a great, easy recipe that can be easily modified.

Mendocino Chicken Salad

This is a really great recipe. I buy chicken breasts and cook them myself instead of buying the pre-cooked stuff and cut down on the mayonnaise since I don't like a lot of mayo. I also add a bit of dijon mustard to give it some extra flavor. The grapes and almonds really make this awesome though.

Feta Veggie Quiche

This is a really great recipe to use as a base for any quiche. The feta really adds a lot of flavor to any quiche, and I just throw in whatever vegetables I need to use up. The recipe makes a bit too much for just two normal pie shells, so I usually make quite a bit less filling. I also make my own pie crust instead of using the frozen ones. Quiche is always a good, easy option.

Cilantro, Avocado, Tomato, and Feta Salad

This is one of my favorite recipes. It is so refreshing in the summer. I have also taken it to multiple dinner parties and it always gets rave reviews. Just make sure not to mix it too much so it doesn't get too mushy.

Lentils And Spinach

This is one of my staples. I always add a lot of cumin, turmeric and curry to give it more flavor and use fresh spinach that I throw in at the end to wilt it. Very hearty and healthy!
