Chef John's Pumpkin Pancakes

I followed the recipe as a guideline using 1/2 white and 1/2 wheat flour. I used a cup of pumpkin pie mix which already had spices. An easy recipe to follow and my family enjoyed them!

Chicken Fried Chicken

After reading the reviews I improvised by using panko bread crumbs, parsley, salt, pepper and Cajun spices. Used only one egg for dipping the chicken pieces (took the skin off some but not all just for comparison). I dipped the chicken pieces in egg and the seasoned bread crumbs, letting them air dry 1/2 hr. Then sprayed a shallow pan w/ Pam and baked @ 350 as directed. The chicken was crispy and plenty moist.with more than enough grease considering the small amount of oil used..My family loved it!!! Next time I will bake in the Foreman grill.

Country Brunch Skillet

very good and will make it again. we had it for supper and my family really liked it. I didn't have the hash browns, so shredded a few potatoes instead and browned in the cast iron skillet. Followed the rest of the recipe but no cheese in the house. Bacon was mixed w/ the potatoes= an omission more than intentional.

Fish Fillets Italiano

My family enjoyed this dish and I enjoyed preparing it b/c it was so easy. I didn't have a few ingredients so I substituted green olives instead of black and chicken stock instead of wine. I cooked frozen green beans separate and added them to the pan to finish cooking, which picked up the flavors. Thanks for posting this recipe!

Neat Sloppy Joes

For once I followed the recipe using the spices and was disappointed. Not very memorable meal at all. Maybe the ground turkey killed it.
