I work part time and care for my family full time. Food is an enjoyment for me. I take pleasure in sharing my skills with others.
My favorite things to cook
I like to make healthy quick meals using basic ingredients. I rarely used convenience foods but sometimes they come in handy for a meal in a pinch. Mostly I cook and bake from scratch. I love all vegetables.
My favorite family cooking traditions
They change as my family grows up and moves away. Evolving :)
My cooking triumphs
Putting on a harvest dinner for over 30 people and making the turkey and gravy.
My cooking tragedies
Lima Bean Casserole. Don't know why I even used dry beans b/ hate Lima beans. The whole thing came out stiff and could have been used to mortar bricks!

Chef John's Pumpkin Pancakes
I followed the recipe as a guideline using 1/2 white and 1/2 wheat flour. I used a cup of pumpkin pie mix which already had spices. An easy recipe to follow and my family enjoyed them!

Chicken Fried Chicken
After reading the reviews I improvised by using panko bread crumbs, parsley, salt, pepper and Cajun spices. Used only one egg for dipping the chicken pieces (took the skin off some but not all just for comparison). I dipped the chicken pieces in egg and the seasoned bread crumbs, letting them air dry 1/2 hr. Then sprayed a shallow pan w/ Pam and baked @ 350 as directed. The chicken was crispy and plenty moist.with more than enough grease considering the small amount of oil used..My family loved it!!! Next time I will bake in the Foreman grill.

like others said 2 runny... added extra flour but still had to pour into pan and bake like a cake.
