Very good alteration to the original! The bread itself is very moist and has a good flavor unlike so many healthy adaptations that sacrifice taste for fewer calories. I did have to do substitutions, but nothing too radical- I used all-purpose flour in place of the pastry flour since I don't know where to find pastry flour. I only had cinnamon applesauce, but that worked fine, too. I didn't have yogurt, so I went ahead with buttermilk made with lemon juice in 1% milk. An alternative idea with the cherries is to mix them in whole, which, when the bread is sliced, makes for slices with big red polka dots, kind of a striking presentation. Of course, this makes the cherries a little less evenly distributed than if you chop them, so that's just a personal preference. This is well worth making and I will probably make mini loaves to give away this Christmas.
