Raspberry Streusel Muffins

Reviewed: Jul. 1, 2011
Great muffins. The only thing I suggest is breaking up the raspberries into smaller pieces so you get some raspberry in every bite.

Hamburger Buns

Reviewed: Feb. 4, 2011
I found little slider patties, so I needed custom-sized buns. I followed the suggestions by faeriecat and the buns rose just fine in 20 minutes. I couldn't believe my luck, finding a bread recipe that takes less than an hour. I halved the recipe and got 16 slider buns out of it. These buns are quite tasty by themselves, especially fresh out of the oven, and would make great dinner rolls, and all in less than an hour!

Sugar Cookie Cutouts

Reviewed: Dec. 6, 2010
What an agreeable dough! It's like rolling out play-doh. Mine was well-chilled and softened to a good consistency as I worked with it. If you don't have any heavy cream, melt 1 1/3 tablespoon of butter and mix with milk, filled 3/4 of the way up your quarter cup. You may need to heat it slightly to re-melt the butter after adding cold milk to it. I also added some almond to this recipe out of personal preference. Baking them on an airbake makes them cook up completely without even turning slightly brown.

Cherry Nut Bread - Healthier

Reviewed: Dec. 1, 2010
Very good alteration to the original! The bread itself is very moist and has a good flavor unlike so many healthy adaptations that sacrifice taste for fewer calories. I did have to do substitutions, but nothing too radical- I used all-purpose flour in place of the pastry flour since I don't know where to find pastry flour. I only had cinnamon applesauce, but that worked fine, too. I didn't have yogurt, so I went ahead with buttermilk made with lemon juice in 1% milk. An alternative idea with the cherries is to mix them in whole, which, when the bread is sliced, makes for slices with big red polka dots, kind of a striking presentation. Of course, this makes the cherries a little less evenly distributed than if you chop them, so that's just a personal preference. This is well worth making and I will probably make mini loaves to give away this Christmas.
