About this Cook
I am a stay at home mom/wife. Our 4 teenagers love me cooking for them. We have 80 acers and 4 acers of wild black berries. Our dream is to have a farm and one day completely live off the land. We just raised some pigs and had 2 of them butchered, so I'm going to be trying ever pork recipe I can find. This spring we're going to get some cattle and chickens. God has Blessed us so much :)
My favorite things to cook
Everything. I like to cook challenging things, and try international recipes. I am still learning to can, but I love it!
My favorite family cooking traditions
We love food and trying new things. My family loves me cooking dinners and desserts for them. For everyones birthday I cook them whatever they want. They like that and if they come request something, I try my best to make it for them. We always try the local food when we travel, so if it's something we really like, I learn how to make it.

Canning, curry's, just about anything I try with a recipe
My cooking tragedies
baking potatoes in the microwave. I don't do so well without a recipe for a guide line

Curry Tuna and Rice Casserole
I doubled the recipe and added a can of cream of mushroom instead of two can of cream of celery. I love curry, but the curry spice in this, I thought was just too much.

Catfish Gumbo
This is excellent!!! I thought the spices and the amount of veggies are well balanced. Very pleased and will make this again. I did leave out the celery (only because I was out) and I cooked the veggies in a little bit of water instead of the oil to cut out the fat.

Slow Cooker Italian Beef for Sandwiches
We went to Chicago last month and tried the local food there. We really liked it so I wanted to make it for our super bowl party. It was a huge hit. Everyone thought this was just like the sandwiches we had there. Thank you for sharing this great recipe!
