Baked Teriyaki Chicken

I will have to say this is delicious and moist. The sauce is plentiful and amazing-even though it will knock the roof off my insulin resistance. Made a double recipe and am freezing it.

Thai Spiced Barbecue Shrimp

The perfect combination of spice with a bit of "sweet". Next time will add a bit of chopped fresh lemon grass to try. Delicious marinade that would be nice on pork and chicken as well.

Crispy Salmon Patties

Used the ground flax in place of egg....omitted oil and used spray to prevent sticking in non stick pan. Made four servings at 300 calories a serving and tasted DELICIOUS!

Best Ever Chicken Casserole

My family LOVED this and the tiny bit left disappeared for BREAKFAST next day! I used a sweet onion and the taste was not overpowering, as another reviewer thought. The chicken was so tender from boiling too.

Lemon Lush

This was SO easy to fix and a huge hit at our office "fish fry". I used whole wheat flour which actually added a nutty taste, along with fiber. I also used low fat cream cheese, fat free whipped topping and sugarless pudding.

Date Nut Bread

I make this recipe South Beach friendly by using whole Wheat flour, 2 c of Splenda and either artificial margarine squeeze or applesauce. It always turns out great and is very nice and moist.

Baked Potato Salad I

Very good -I added some fresh chopped chives from the garden as a topper. Goes nicely with burgers or barbecue. Next time will try the sour cream suggestions for a little less dryness.
