Blueberry Oat Cookies

Delicious! I usually hate blueberries, but my boyfriend loves them, so I gave this recipe a shot. the flavors blend together perfectly, and the blueberries really soften up when baked. I used fresh blueberries and tossed them with a little flour and didn't have any trouble at all with them bleeding throughout the cookies.

Balsamic Baked Tilapia

My new favorite recipe for tilapia! I added zucchini and garlic to the pepper and onion mixture, and I used a little more than the 2T of balsamic vinegar. I also omitted the cheese and baked at 350 for 15 minutes. I might try broiling it for a few minutes next time, as per some of the other comments.

Stephan's Broiled Salmon Pesto

Simple, fast, and delicious. My class didn't get out until 9pm tonight, and with this recipe, I was enjoying a delicious meal 20 minutes after I got home. Per other suggestions, I broiled a bit prior to putting on the pesto. The pesto didn't completely crust, but I was concerned about cooking the fish thoroughly, and it was still very good. I had a fairly thick piece of salmon, so I broiled for 5 minutes with just the lemon and wine, then added the pesto and broiled for another 5 minutes. Perfect!

Balsamic Chicken

If you're considering this recipe, the answer is YES!!! Although I'm big on changing up recipes, this one is perfect -- only thing I did different was marinating the chicken breasts for around 3 hours prior to cooking. There were some reviewers talking about how the marinade/sauce was too bitter and vinegary. If you think this, you are using the WRONG vinegar! Good balsamic is not overly vinegary. Yes, it's more expensive than the alternative, but it's completely worth it for recipes like this. I doubled the sauce/marinade and reduced it more after the chicken was done cooking and spooned some of it over the chicken. My friends loved the sauce so much that they spooned some of the extra over their vegetables! Everyone raved about this dish and one friend even begged me to give her cooking lessons! Delicious, impressive, and simple. Who could ask for more??

Pan Seared Lemon Tilapia with Parmesan Pasta

Baked, as per a previous reviewer, 375 for 12 minutes. The seasoning on the fish complimented it very well. The pasta itself was a little lemony, so I will probably cut the lemon juice next time for the pasta. Everything else was delicious! I used whole grain pasta, so this was a very WW friendly recipe!

Cinnamon Swirl Bundt Coffee Cake

I've made this cake three times in the past month, twice for my classmates and once for my family over Christmas break. It never lasts more than 24 hours! I mixed up some cinnamon sugar (one tablespoon white sugar, one teaspoon ground cinnamon) and sprinkled it in the buttered bundt pan before pouring in the batter. For the cake batter, I creamed the butter and sugar first, and added one egg at a time to the mixture. Also, I used light brown sugar instead of white for the center swirl, and I doubled the recipe for the swirl. It's actually better if you let it sit overnight; the cake gets moister, especially around the swirl. The perfect breakfast cake... just sweet enough for a cup of coffee!

Creamy Au Gratin Potatoes

Tasted delicious, but I think next time I'll add some cornstarch to thicken the sauce up a bit. I took the advice of some of one reviewer and increased the sauce by half, and added double the cheese. For some reason, the sauce was very runny. Still, the flavor was amazing! I minced the onion and sprinkled garlic powder in the middle layer and over the top along with some pepper before adding the cheese. Everyone loved it, even though it wasn't very pretty.
