Delicious Ham and Potato Soup

Melt in your mouth potato soup! I used a 4 cup container of chicken broth instead of water and chicken bouillon. Also added a little extra flour. Perfect!

Glazed Mint Brownies

We just didn't like these. Way too rich, the mint was overpowering, even though I only added 1/2 tsp peppermint extract, even less than what the recipe called for.

Sweet Potato-Turkey Meatloaf

I've made this twice - with sweet potato once, and squash the next - very tasty. It doesn't replace regular meatloaf, however. Very different. I only rate 3 stars, because it literally falls apart when serving and I dish it up with a large spoon. Would never make for company because of this issue, but the flavor is good...

Texas Black Bean Soup

A very pleasant surprise! I only had 1 can of tomatoes and no chilis, so I used 2 cups of mild, chunky salsa and it turned out great! I also used 32 oz of chicken broth, and that was perfect... it would have been bone dry with absolutely no broth had I only used one can. Good recipe for the family - definitely would not make for guests, as if you don't like spicyness, beans, corn or tomatoes you would definitely not like this soup!

Frosted Oatmeal Bars

there is something about the topping (pb & choc mixed together and refrigerated) that makes me lose control. i literally cannot eat just one and have to run a marathon to burn off the rest. BUT it's soo worth it! lol

Oatmeal Peanut Butter Cookies

These are absolutely delicious and a great, great, GREAT recipe to make butter-less and extra healthy for the husband and kiddos. Instead of any shortening/margarine/butter, I used 1 cup applesauce and cut the white sugar down to 1/2 cup (the applesauce is sweet, that's why you can cut down the sugar). I also used whole wheat flour and natural peanut butter. Very delicious - your husband (and kids!) may never thank you for helping him/them keep a slimmer waistline, but deep down, you'll know you've done your job!! :)

Creamed Spinach II

I was nervous when I was told to bring Creamed Spinach to my in-laws house one holiday, as my FIL considers himself a creamed spinach connoisseur. I chose this recipe as 1) Looked easy, how hard could it be? and 2) Cream of mushroom soup makes everything delicious. I was right! Everyone loved it!

Ratatouille Bake

Excellent! The only way I can get my 1 year old son to eat eggplant. Because my husband is a meat lover, I added spicy jalapeno sausage from Trader Joe's and red pepper flakes and made it a spicy sausage Ratatouille bake. Yum yum.

Ground Turkey Casserole

A good basic recipe, but I would not make it again as is.... too high in calories. I cut out the cream cheese and cheddar cheese entirely. I put noodles in the bottom of the pan, then just made one layer with tomato sauce, ff sour cream, chopped zucchini, spinach, ground turkey, etc. When the casserole was done cooking, I sprinkled with parmesan. Delicious, healthier, and lower-cal!
