Stuffed Zucchini II
Made this recipe last night for my boyfriend and myself. It was yummy and filling. We followed a suggestions and added some parmesan into the mixture and on top too. Also sprinkled a bit of mozzarella on top too- not much! The tomato salsa was great and I suggest making enough to really cover the recipe in it. Next time I try it though, I'm going to use a marinara sauce to pour over top after they come out of the over because I think that would really compliment it. The breadcrumbs just made the mixture a little dry so any added moisture would be great. Maybe even more chicken broth to add. I'll definitely make this again. It's a great meal. We ate it with a spinach salad and felt like a million bucks after!

Campbell's Kitchen Chicken Broccoli Divan
I used a few of the for-mentioned ideas and ate a pretty good dinner. First, I lined the dish with white rice that I boiled in chicken broth instead of water. Then I added the boiled chicken, and steamed broccoli. I added enough sharp cheddar until it looked yummy and poured creamy mushroom soup (with a tbsp of mayonnaise) over the top. Instead of breadcrumbs, I crushed seasoned veggie crackers on top and then just a pinch of each salt and pepper. It was YUMMY and my boyfriend is taking the rest for lunch tomorrow.

Lime Chicken Picante
I love this recipe! I started by just following the suggestions of other users and making double the amount of sauce, but now I quadruple it! It's just that good. I usually serve it over rice and so I like a little extra to pour over. This time I made it a little different (not because it needed amending, but just because I was bored). I cut the chicken into bite size pieces and and made extra sauce, I also added some bite size pieces of red and yellow peppers. Instead of topping with yogurt I made some homemade guacamole and plopped a scoop on top. It was amazing! My boyfriend even made some margaritas, and the whole evening was a hit! We loved it! I don't suggest changing the recipe because it's bad, only if you're looking for something similar but more interesting. YUM!
