Best Peanut Butter Cookies Ever

Gave 4 stars because I modified the recipe heavily to fit the dietary needs of my family and don't want to mess up the ratings. Tried using egg replacer and sunflower butter...worked ok but needed more sugar. Wouldn't recommend my modifications as it is just to crumbly and not sweet or chewy enough.

Hot Chocolate

Best hot chocolate ever... I doubled this recipe and didn't use egg. I also used semisweet chocolate chips mixed with dark chocolate chips melted in microwave and then stirred into the 2% milk warming on the stove. Whisked constantly until hot. Served, topped with whip cream and grated Ghiradellie 60% cocoa sprinkled on whip cream. Cinnamon is what makes this recipe. Again don't use the egg.

Indian Tandoori Chicken

Marinated overnight and used chicken breast (all I had in house) and broiled. Turned out great. The only change I would make to the recipe would be to use turmeric, and more cayenne for color and heat. I would also use more gara masla next time. and not use the dye's, though i followed the recipe as written and the color was very good with the dye's.

Great recipe. Family loved it. Modified by using egg-replacer (Ener-G) instead of egg and it worked great. Would be a 5 star if it was lighter and flakier like it is in the restaurants. Will make again.

Curried Coconut Chicken

Great recipe for a curry base. Family, including very picky kids loved it. I modified slightly by using light coconut milk, added .5 TBS of Garam Masala, cooking uncovered, draining excess water from the tomatoes before adding, and adding some frozen peas when I added the coconut milk. The only reason I didn't give it 5 stars is because it needs some spicy kick added as an option to the recipe. I would probably also leave out the tomato sauce as I'm not sure it is needed.

Molasses Cookies

Excellent. I modified by using egg replacer instead of egg and smashed balls before baking. Turned out perfect in every way. Kids even loved them even though they have a very adult flavor.

Cranberry Oat Bread

Good bread. I modified slightly and used 1/2 cup of mixed dried cranberries and raisins. While good, I gave it 3 stars because think it needs more honey and cinnamon. I think I would double the honey and cinnamon next time.

Espresso Bark

I modified this resume to use Butterscotch Chips instead of White Chocolate, increased butter to 1 TBSP, and sprinkled with coconut flakes for color. Additionally I used 1/4 cup of whole coffee beans and the other 1/2 cup of beans I ground slightly as was suggested by other reviewers. I then put in fridge for about an hour and then cut carefully with a Pizza cutter. Taste Great. Next time I might try dark chocolate.
