Ginger Glazed Mahi Mahi

This was fabulous!!!! I am still thinking about it four days later. Even my kids and husband who do not like fish, loved this dish. I used crystallized ginger instead of fresh and it turned out perfect. Served with a sauteed mixture of green beans, sugar snap peas and mushrooms. Placed the mahi mahi on top of the veggies. Also used the frozen mahi mahi available at Sams Club.

Sausage and Vodka Tomato Cream Sauce with Pasta

Very good recipe. I used mild Italian sausage and a little bit more cream. Came together very quickly and it smelled wonderful. Also, used a bit more Grey Goose than the recipe calls for.

Easy Lettuce Wraps

Wow, wow and more wow! I am one happy camper right now. Made this for lunch and cannot believe how simple and quick this was. This is delicious. I omitted the corn starch because I didn't have any but I don't even think you need it. I also substituted brandy for the dry sherry since I was out. Next time, I will up the cilantro amount because I love cilantro or will try the whole cilantro in the wrap thing. This is really good and I found myself picking at the pan and eating it without the lettuce. I think it would also be good served over rice or asian noodle dish. Great stuff. Try it and you will be amazed.

Broccoli and Tortellini Salad

Fabulous recipe! Followed it exactly except I reduced the sugar by one tablespoon (I reduced the recipe to four servings). This was pretty darn tasty and we loved it. Cannot wait to try the leftovers for lunch.

Vegetable Medley II

Quick and easy. I melted some butter with olive oil, sliced instead of diced and added salt, pepper and minced garlic instead of garlic pepper. Great way to use up veggies from the garden.

Blue Cheese Potatoes Delmonico

Improvised a bit -- upped the amount of blue cheese, left out the flour and used heavy whipping cream only. These really went great with a Delmonico recipe from this site (see reviews). Served with Pat's Sauteed Mushrooms (also from Allrecipes) and a bottle of Pepperwood Merlot. All the flavors complemented each other so well. Great meal.

Lazy Bruschetta

Bow Tie Pasta with Sausage and Veggies

Great tasting recipe. I ignored the "whole boiling sausage thing" and merely took the sausage out of the casings and browned. Added a little bit of Italian seasoning, fresh ground black pepper, a little sugar, hot sauce, used zucchini instead of yellow squash and used frozen diced onion as a timesaver. Served with penne pasta instead of rotini. Finally, I added some marinara sauce. Delightful dish and great tasting.

Best Green Beans

We all loved this recipe. Used peppered bacon (only about one-eighth of a pound) and microwaved a frozen bag of haricort verts from Trader Joes. Everyone had seconds including the kids.

Restaurant Style Spaghetti Sauce

Very, very good. Added a little bit of salt and fresh ground pepper. Simple = Great. How much better than that. The leftover merlot went great with the pasta.

Devil's Food Sheet Cake

Gobbled up by the family. Didn't even bother making the icing. They have eaten it plain as well warming a piece up in the microwave and serving with vanilla ice cream, whipped cream and homemade hot fudge sauce. This is a keeper. I plan on making another one today.
