Jean's Homemade Chicken Noodle Soup

Reviewed: Oct. 23, 2006
Added onion powder, fresh parsley, spaetzle noodles, and used a ground ginger/garlic puree. Great tasting and was even better the next day.

White Wine and Garlic Dream Cream

Reviewed: Oct. 20, 2006
Good recipe. Did use less lemon (just do it to your own personal preference) and added more fresh minced garlic per the other reviews. I also didn't bother with having the heavy whipping cream at room temperature.

Delicious! Use a good quality olive oil. Also, added some fresh grated parmesan reggiano on top.

Absolutely Best Brownies

Reviewed: Oct. 20, 2006
Used all purpose flour with some baking powder. Also left out the walnuts because the kids don't like nuts. I was expecting a lot more out of these and didn't think they were that fantastic. They were dry and I thought they could have used more chocolate flavor. I am giving them a four because my husband liked them.

Richard's Chicken Breasts

Reviewed: Oct. 20, 2006
Reduced the recipe to three servings, used sliced button mushrooms, added garlic powder as well as seasoning salt and fresh ground black pepper. Used more marsala and shredded mozzerella. Flattened the breasts before frying in the olive oil/butter mixture. The recipe didn't say what to do with the butter. Also used frozen diced onion as a timesaver. Overall, good but not "wowing."

These were devoured by the whole family. They never made it out of the pan. Very good recipe and easy to prepare.

Corn and Rice Medley

Reviewed: Oct. 19, 2006
Used regular fast cooking rice and added cilantro and lime/lime juice. Left out the mint since I used the cilantro instead. Reduced shallots because I didn't have that much and used frozen roasted corn from Trader Joe's. Delicious hot or cold. In fact, my daughter is taking some for her lunch today.

Monster Sour Cream Enchiladas

Reviewed: Oct. 19, 2006
The flavor was good but these turned out a bit mushy and upappealing to look at. Reduced down to two cans of cream of chicken soup and added some frozen diced onion as well as ground cumin. Topped with additional cheese, sour cream and a chipotle salsa before serving. Used fresh chicken breast that I boiled and shredded.

Italian Baked Cannelloni

Reviewed: Oct. 18, 2006
I had high hopes for this one considering the amount of time and effort put forth. My husband liked it a lot better than I did. Made a mixture of ground hamburger and Italian sausage, added appropriate seasonings and used no-boil cannelloni. I ended up added some jarred sauce in order to cover the cannelloni before baking. Won't be making again.

Strawberry Ice

Fresh and delicious. Think of it as a sorbet. I like this so much better than ice cream. Our family has made this for years.

Cappuccino Mousse Trifle

Reviewed: Oct. 17, 2006
This made quite a bit even though I reduced the recipe. Used only one pound cake and used a fresh one, not frozen, though that would be fine. I added more coffee because I thought it needed a bit more flavor. Good but I doubt I will make again.

Added basil as well as marjoram and a dash of sugar. Needed a quick sauce for my chicken parmesan and this fit the bill nicely.

Italian Sausage With Spaghetti

Reviewed: Oct. 17, 2006
I browned the sausage first and then added the veggies and some other seasonings. Overall, I thought it was a bit dry and really missed having tomatoes. Ended up pouring in a jar of vodka sauce, then it was terrific.

Italian Sausage Mushrooms

Reviewed: Oct. 17, 2006
I put these under the broiler instead of doing in the microwave. I also used Aloette instead of plain cream cheese. Added the slightest touch of cayenne. Topped with parmesan before putting in the oven.

Parmesan Chicken

Used Italian bread crumbs and cooked mine for a bit longer in a mixture of olive oil and butter. Served atop spaghetti marinara. Topped with mozzarella cheese and put under the broiler. Great meal.
