Rice Stuffing with Apples, Herbs, and Bacon

Liked this a bunch. Went great with a roast pork tenderloin. I just made my wild rice separately as well as the white rice. With the wild rice, I used chicken broth plus some water. Added some golden raisins as well. This was very tasty served cold as well.

Pesto Hamburgers

Delicious. I had a similar burger at a local chain restaurant and was blown away. Decided to recreate this at home. Used foccacia bread as the bun. Grilled the burger and used some ready-made pesto from Sam's Club. Left out the red pepper strips. Cannot wait to make this again.

Chicken Pot Pie I

This was so simple to prepare. I increased the amount of chicken and shredded it instead of dicing. Added some additional seasonings to make it seem more homemade. Instead of milk, I added heavy cream. This was very enjoyable on a cold night and I will make again.

Three Berry Pie

Absolutely wonderful pie! I, too, used the frozen bag of mixed berries from Sam's Club. I plan on making this again and trying it as a cobbler. Great warm with vanilla ice cream and a sprinkling of cinnamon.

MMMMM... Brownies

Great brownies! I think I have found my new favorite recipe. The chocolate chips added such a depth of flavor as opposed to cocoa powder. No problems whatsoever.

Chicken and Dressing Casserole

Loved this! Such comfort food. Used leftover chicken and added some frozen diced onions. Added a bit of poultry seasoning and about one cup or a cup and a half of chicken broth to the dressing. Next time I will just add water to the dressing mix or use low salt chicken broth. Used one can of cream of mushroom and one can of cream of chicken. Added some celery seed on top and didn't add quite the amount of water suggested to the soup mixture. Will make again for sure.

Devil's Food Sheet Cake

Gobbled up by the family. Didn't even bother making the icing. They have eaten it plain as well warming a piece up in the microwave and serving with vanilla ice cream, whipped cream and homemade hot fudge sauce. This is a keeper. I plan on making another one today.

Juicy Roasted Chicken

Added lemon slices, rosemary sprigs and garlic to the inside of the chickens and reduced the temperature and let the chickens really slow roast. Used Lawry's Perfect Blend Chicken and Poultry Seasoning. Delicious.

Blue Cheese Cole Slaw

I liked this better than my husband. Thought it was extremely easy to prepare. I reduced the recipe to four servings and some of the measurements were off so I just eyeballed and used my own judgement. Added more blue cheese.

Kickin' London Broil with Bleu Cheese Butter

Penne con Sauccia

Used mild Italian sausage with some sugar thrown in the sauce as well as fresh herbs and fresh mushrooms. Used a can of diced tomatoes with no additional seasonings but did add some diced frozen onion. Quick to pull together and yummy.

Quick Italian Vegetable Soup

Very easy to prepare. Used frozen, diced onions. I left out the cabbage and garlic salt. Instead used fresh minced garlic and seasoning salt. Added a bit of red wine as well as Italian sausage (browned with the veggies). Topped with shredded parmesan and served with bread out of the oven.
