Mozzarella Mushroom Chicken

Flattened the chicken breasts thin and then sauteed them in an olive oil/butter combination. Added more sliced mushrooms. Two cups of mozzarella cheese for two chicken breasts is ridiculous! Just eyeballed the amount that I thought would be appropriate.

Big Bob's Big Brunch Quesadillas

Added salt, pepper and crumbled sausage. Warmed the tortillas in the microwave with wet paper towels. To do over, I think I would leave out the tomato as it didn't really add anything.

Chocolate Chip Pancakes

Added some vanilla extract as well as a few drops of lemon juice. Didn't make the syrup as I included the cinnamon in the pancake batter. Light and fluffy!

Hash Brown Casserole II

Used a can of cream of celery as well as a can of chicken soup. Added garlic powder, a couple of dashes of hot sauce and some celery seed. Didn't have corn flakes so I used French fried onions on top. Very good and easy to prepare.

Chicken Jambalaya

Pretty good. I added some worchesire as well as Creole seasoning and some black pepper. Used instant rice and added a can of beef broth. Used frozen diced onions and green peppers as timesavers. Just threw some raw chicken breasts in the mix and let them cook, then shredded the meat. Not the best jambalaya recipe but certainly not the worst. Also, left out the shrimp because of a shellfish allergy.

Red Beans and Rice

Even better the next day. I added some Zataran's Creole seasoning as well as Andouille sausage. Used more onion and green pepper (frozen diced as a timesaver). Will make this again for my Mardi Gras gathering.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

Wow, wow, wow! This is one superb dish! I used sliced black olives instead of chopped and also seasoned the chicken breasts with some seasoning salt and black pepper. Used bottled lemon juice as I didn;t have fresh on hand. Also, flatten out your chicken breasts before frying. What an excellent meal. Cannot wait to make this again for friends. Probably one of my top five recipes from Allrecipes.

Quesadillas on the BBQ

Definately take the suggestion of putting the cheese on both sides to hold the ingredients in and using your imagination with the ingredients. I used chicken instead of shrimp because I am allergic to shellfish. Also, instead of brushing oil on the outside, I used a little melted butter. Watch them closely. Love the grill marks.

Almond Tea

I also used regular tea bags. Never would have thought to make tea with almond and vanilla extract but it was good. Like the subtleness of the flavor. Didn't include the sugar as we sweeten to individual taste.

Chicken Chili Soup

Quick to prepare and good tasting. My husband said it had the perfect blend of seasonings. I added seasoning salt, fresh ground black pepper and used frozen diced onions, green peppers and a Fiesta blend bag of veggies that included black beans. Left out the kidney beans. Topped with sour cream, shredded cheddar cheese and tortilla chips.
