Chicken Enchilada Soup I

This was good but a bit thick even though I had used more chicken broth. Everyone thought it was a bit spicy but I didn't. Served with sour cream, colby-monterey jack cheese and crispy tortilla strips.

Chicken and Red Wine Sauce

What a superb recipe! I cannot believe I haven't come across this one before. I reduced the recipe to serve two people and some of the measurements didn't change so watch out for that and use your own judgement. Next time I will reduce the brown sugar a tad. I also whisked in some butter at the end for a richer sauce but I think that turned it into more of a toffee flavor so I won't do that next time. Served with thin French green beans and a risotto.

Arti-Cheesy Chicken

At first I liked this but the more I ate, the more bland it did become, especially after mixing it with pasta. My husband enjoyed it, however, that is why it gets 4 stars. I think you may get better results just using jarred Alfredo sauce. Used more chicken (just cooked with the bacon). I didn't use anywhere the amount of bacon the recipe called for.

Chicken With A Bang

Used Monterey jack cheese instead of cheddar and a can of green chiles instead of jalapeno rings. Very flavorful. Nice presentation. Only made the chicken breasts.

Bourbon Chicken

Fried Green Beans

Quick and easy to prepare. I used haricourt verts (thin French green beans). Adjusted the seasonings a bit for personal preference. Will make again.

Cheesy Italian Tortellini

Yummy but instead of doing this in the slow cooker, I just baked. It was simple to prepare and plan on trying other varieties of tortellini with different sauces.

Pan-Seared Chicken Breasts with Shallots

Very simple to prepare. Flattened my chicken breasts and added sliced button mushrooms. I also added a few additional seasonings just to give it a little bit more uummph.

Emergency Garlic Bread

OMG! I had to do the same thing once when I didn't have any French or Italian bread but had to have garlic bread. It turned out wonderful! Of course, the kids balked at not having the "real thing" but it did taste great.

Enjoyed this a great deal. Added dried oregano as well as a little jarred spaghetti sauce and cayenee pepper since my Italian sausage was mild flavored. Served over penne pasta.

Cranberry Puffs

I love this little recipe because it gave me the idea to use a raspberry chipotle sauce (bottled from Costco) instead of cranberries to make this. The combination of sweet and spicy is just wonderful.
